Darker colored beans like red beans are very good sources of antioxidants.They help to fight cancer, heart disease and diabetes. Combining them with rice, it makes a complete meal. They are also versatile as they can be added to a number of different dishes. My family loves one pot meals, so I prepare it often. I had lot of fresh red beans with me, so I prepared Red beans rice and served it with onion raitha. Needless to say my family enjoyed it very much. Today we will learn how to make red beans rice following this easy recipe.

Ingredients needed
Basmati rice- 1 cup
Small red beans -1/4 cup
Onions – 1/2 cup chopped
Ginger-garlic paste – 1 tsp
Tomatoes – 1/2 cup chopped
Turmeric powder – 1/4 tsp
Coriander powder – 1 tsp
Chilli powder -1/2 tsp
Garam masala powder – 1/2 tsp
Fresh Lemon juice -1 tbsp
For the seasoning
Oil – 1 tbsp
Cloves -2
Cinnamon – 1 inch piece
Bay leaf -1
Preparation
Soak basmati rice for 15-20 minutes, drain off water and keep it aside.
Soak red beans (if using dry ones) for 5-6 hours or overnight and pressure cook with a little salt until soft. Since I used fresh red beans, I skipped soaking.
Heat oil in a pan and add the ingredients mentioned under seasoning.
Add onions and saute until they become transparent.
Then add ginger-garlic paste and saute for a few more minutes.
Add tomatoes, turmeric powder, coriander powder, chilli powder, garam masala powder and cook for a further 3-4 minutes.
Add cooked red beans, rice, salt needed, 2 cups of hot water, lemon juice and pressure cook for 2 or 3 whistles. Once the pressure subsides, open the cooker and mix the contents well.
Alternatively, you can close the cooker without weight, once the rice is half cooked stir the contents, put the whistle/weight and simmer for 5 minutes.
Garnish with coriander leaves.
Serve Red beans rice with raitha or papads or chips.
