The most simplest, easiest curry which does not need much ingredients and can be prepared in a jiffy. There can hardly be anyone who does not love potatoes. This curry goes well with all Indian breads – roti, chappati and poori. It can be used as a stuffing for sandwich toast and also goes well with rice. I have given two methods of preparing this dry version of potato curry, both of which tastes great. I have used vegetable curry powder, though you can use even plain chilli powder and coriander powder, but using curry powder gives the curry a very nice flavor and taste. Today we will learn how to make potato curry-South Indian Style following this easy recipe.

Ingredients needed
Potatoes -250 grams (1/4 kg)
Onion -1 big finely chopped
Ginger – 1 tbsp (finely chopped )
Green Chilli – 1 finely chopped
Turmeric powder – a pinch
Curry Powder – 1 tbsp ( if using plain chilli powder, use very less)
Salt needed
For the seasoning
Oil -2 1/2 tbsp
Mustard seeds – 1 tsp
Urad dal – 1/2 tsp
Curry leaves -few
Preparation -Method -1
Wash potatoes well, peel the skin and cut it into small cubes.Keep it in water until ready to use, to prevent discoloration.
Heat oil in a pan, add mustard seeds, when it splutters,add urad dal and curry leaves.
When dal turns golden brown, add onion and saute well until it becomes transparent.
Then add ginger, green chillies and saute for a few more minutes.
Drain the water well and add the chopped potatoes, turmeric powder and salt needed.
After 5 minutes, add vegetable curry powder or chilli powder and cook covered on low fire stirring from time to time to prevent the potatoes from getting burnt. (you can sprinkle little water in between if needed).

This is the quickest method to make potato curry.
Pressure cook potatoes. Peel the skin and cut it into big pieces.
In this method, we are replacing raw chopped potatoes with boiled and peeled potatoes.That’s all. Follow the rest of the procedure as above.
Note – Be a little generous in adding oil for the curry to taste yummy.
Curry powder – Fry bengal gram, coriander seeds and red chillies in a tsp of oil, powder it and store it in an airtight container. For more details, check curry powder recipe
