Potato Spinach Recipe

The health benefits of spinach are numerous and its ability to help prevent diseases is well known. Spinach is an excellent source of beta-carotene, a powerful disease-fighting antioxidant. It is a rich source of Vitamins C, A, minerals and iron. It can be called the Super food. Combined with the versatile potato, it is a fantastic side dish for rice or roti (Indian flat bread). This is a very simple and easy curry which can be done in a few minutes time. Enjoy the health benefits of spinach by preparing this easy and simple Spinach Potato Curry (dry sabzi).

   Ingredients needed

   Potatoes – 4
   Spinach – 1 cup tightly packed
   Turmeric powder – a pinch
   Chilli powder – 3/4 tsp
   Coriander powder – 2 tsp
   Salt as required

   For the seasoning

   Oil -2 tbsp
   Cumin Seeds – 1/2 tsp

Preparation


Pressure cook potatoes, peel the skin and cut it into cubes.

Wash spinach well, discard the thick stems and chop the leaves finely.

Method


Heat oil, add cumin seeds, when it sizzles, add the cubed potatoes and turmeric powder.

Saute for 5 minutes on medium flame. Then add the chopped spinach, chilli powder, coriander powder and salt needed.

Cook covered on low flame until the spinach wilts and combines well with the potatoes.

Serve as a side dish for rice or roti or chappati.
