This onion thokku goes well for idly, dosa and all Indian breads. If you like onions, you can even use it as a spread for sandwich. This stays good for a month in the refrigerator, if properly handled. When you do not find time to prepare chutney, this thokku comes handy. It is very simple to prepare this thokku. Ingredients needed
Onion – 250 grams or 1/4 kg
Chilli powder – 20 -25 grams
Salt – 40 grams
Tamarind – 40 grams
Fenugreek powder – 1/2 tsp
For the seasoning
Oil – 1/4 cup
Mustard seeds- 1/4 tsp
Asafoetida/Hing -1/4 tsp
Preparations
Peel and grind onions to a smooth paste.
Soak tamarind in warm water ( around 1 1/2 cups) and extract it juice .Discard the pulp.
Dry roast fenugreek seeds and powder it.
Method
Heat oil in a heavy bottomed pan, add mustard seeds, when it splutters, add asafoetida, ground onion paste and turmeric powder.
Fry for a few minutes and then add tamarind extract, salt, chilli powder and cook till it becomes thick and oil starts separating.
Add fenugreek powder and remove from flame.
Store it in a clean bottle.
Note -Adjust salt and chilli powder according to your taste.
