Aloo poha is a quick, easy and healthy breakfast prepared with flattened rice and potato. It makes a tasty and filling breakfast/dinner. You do not need any side dish for this. Aloo poha tastes good on its own. But if needed, you can have it with tomato chutney or pickle. This can also be had with evening tea. This is a quick breakfast recipe which can be prepared in just 5-10 minutes. It is also quite filling. I prepare this often as my children love this very much. Guess why?? because it has potatoes in it. You can prepare this even with leftover potato curry or boiled potatoes.
Wash aval /poha (I have used thin white poha/aval) under running water for 2-3 minutes and drain all the water with a help of a colander or sieve. Keep it aside. In the meantime we will prepare the potato bhaji.
You can use either chopped (uncooked) potatoes or boiled and cubes potatoes.
Heat a tsp of oil in a pan, add mustard seeds,when it splutters, add urad dal, when dal turns golden brown, add onions and saute until it turns transparent.
Then add ginger, green chillies, turmeric powder and saute for a few more seconds.
Add cubed potatoes, salt needed and cook until the potatoes are soft. Add little water and cook covered. (If using boiled potatoes, saute for just a few seconds).
By this time the poha would have become soft (check by pressing it with your finger or by tasting it). Fluff it gently with a fork . Once the potatoes are cooked, add the poha to the cooked potatoes. Mix well.
Squeeze juice of half a lemon and mix well. Garnish with coriander leaves and serve hot.

Ingredients needed
