Here is an instant sambar -side dish for idly dosa which can be prepared in just a matter of few minutes. We can call this 10 minutes sambar or Quick sambar for idli or dosa. This instant sambar tastes great when taken hot. Today we will learn how to make a quick and easy sambar for idli, dosa, pongal and vada following this easy recipe.

Ingredients needed
Moong dal/split yellow moong dal – 1/3 cup
Onion – 1
Tomato – 1
Garlic – 4 cloves
Green chillies slit – 6 (medium size)
Turmeric powder – a pinch
Coriander leaves – handful
Curry leaves – a sprig (tender leaves)
Tamarind – a small gooseberry size (very less)
Salt as required
For the seasoning
Oil – 1 tsp
Mustard -1/2 tsp
Preparation
Soak tamarind (Take half of what you take, to prepare sambar for 4 persons) in half cup of water and extract juice. Discard the pulp.
Chop onion, tomato and garlic finely.
Method
Take a pressure pan or a small pressure cooker, add moong dal (pasi paruppu), chopped tomatoes, chopped onions, slit green chillies, garlic, coriander leaves, turmeric powder, salt needed and 1 1/2 cups of water. Pressure cook for 3 whistles.
Open after the pressure is released. Mash it well. Add tamarind extract and bring it to boil on medium heat.
Heat oil, add mustard seeds,when it splutters, add it to the above dal.
You quick Idli sambar is ready in just a matter of few minutes.

Note – the consistency of the sambar should be watery.
