Tindora curry- Kovakkai curry-Ivy gourd curry -Tindora sabzi
Tindora or kovakkai sabji goes well with rice and chapati. This is a very simple and tasty dish. It is a wonderful combination for roti .Try it and you will love it.
Ingredients needed
Ivy gourd -300 grams
Onion – 1 big
Potato – 1 big
Chillie powder – 1 tsp
Coriander powder – 1 1/2 tsp
Turmeric powder – 1/4 tsp
Oil – 2 tbsp
Cumin seeds/ Jeera seeds – 1 tsp
Salt as required
Preparation
Cut ivy gourd lengthwise and pressure cook with little water and salt for 1 whistle. Drain the water and keep it aside.
Peel the skin of potatoes and cut it length wise, cut onions also lengthwise.
Method
Heat oil in a pan/kadai, add jeera seeds, when they sizzle, add onions and fry till they turn transparent.
Then add potatoes, turmeric powder and cook till potatoes are half done.
Then add the pressure cooked tindora, chillie powder, coriander powder and salt needed.
Sprinkle little water, cover and cook till done. Stir it in between to prevent it from getting burnt. Let everything get blended well.
Enjoy it with hot rice or roti/chapati
