The other day I got 2 bunches of fresh palak from the vendor from which I made Spinach dal and stored some for making spinach paratha. Yesterday I made Spinach paratha for dinner. I had some onion tomato chutney I made for idly that morning, so we had it with that chutney and it tasted awesome. You can have parathas with any chutney or pickle or curd. How to make spinach paratha

Preparation

Heat oil in a kadai/pan, add jeera seeds, when it sizzles add chopped spinach leaves.

Saute for a few minutes, then add chilli powder, cumin powder, coriander powder and salt needed. Cook till all the water evaporates. Leave it to cool.

Now take 1 cup of wheat flour in a bowl, add the cooked spinach, 2 tsp of oil, needed water and make a soft and pliable dough as shown in the picture above.Grease your hands with a little oil and knead the dough well. Keep it covered for 20 minutes. The dough should not be sticky.(Since we have already added salt to spinach, add salt only if required)

Recipe Instructions

After 20 minutes, divide the prepared dough equally and make balls out of it. Flatten the balls slightly, dust wheat flour and roll out into a circle (pic 1- CW).

Heat a tawa and put the rolled out paratha on it. When you see bubbles appearing, spread oil on the surface. (pic-2)

Flip it over to the other side and spread oil again on the other side. Press the paratha on the corners well with a ladle. (pic-3)

Cook both sides well till brown spots appear. Serve hot with curd or pickle or chutney or even any raitha.
