Soya Chunks Curry-Meal Maker Curry (gravy)

Soya Chunks Gravy-Curry

   Ingredients needed

   Soya chunks/meal maker -1 cup
   Onion – 2 medium size or 1 big
   Tomato – 2 big
   Ginger garlic paste – 1 tsp
   Cashew nuts -5-6

   Turmeric powder – 1/4 tsp
   Chilli powder -2 tsp (home made is not very hot)
   Coriander powder -1 1/2 tsp
   Garam masala powder – 1 tsp

   For the seasoning

   Oil -2 tbsp
   Cumin seeds/jeera seeds – 1 tsp

Preparation

How to cook soya chunks

Bring water to boil with a little salt, add soya chunks to it. Keep it covered for 30 minutes. Then remove it from water, rinse it well to get rid of the smell and squeeze out the excess water. Cut it into 2 pieces and keep it aside.

Blanch tomatoes and take tomato puree. ( refer how to blanch tomatoes)

Cashew nut paste – Soak 5-6 cashew nuts in hot water for 15 minutes, drain the water and grind it to a smooth paste.

Method


Heat oil in a pan, add jeera seeds, when it splutters, add finely chopped onions.

Fry till onions turn golden brown, then add ginger garlic paste and saute for a few more minutes.

Then add tomato puree, turmeric powder, chilli powder, coriander powder, garam masala and cook well until the raw flavor goes.

Now add soya chunks, needed salt, 1 cup of water and cook covered till the soya chunks gets incorporated with the gravy well.

Finally add cashew nut paste and cook for a few more minutes.

Garnish with coriander leaves and serve hot as a side dish for chapati or pulao or naan.
