Beans Curry-Beans Stir Fry Recipe-Beans Poriyal

Beans curry or stir fry is very easy to prepare and goes well as a side dish for chapati and rice. Today we will learn how to make beans stir fry (South Indian Tamil Brahmin style – no onion-no garlic recipe) following this very simple recipe.

   Ingredients needed

   Beans – 250 grams
   Turmeric powder – a pinch
   Grated coconut -1/4 cup
   Salt as required

  For the seasoning

   Oil -2 tsp
   Mustard seeds -3/4 tsp
   Urad dal – 1/2 tsp
   Red chilli – 1
   Asafoetida/Hing – a pinch
   Green chilli – 2 slit

Preparation


String the beans, wash and cut it into small pieces.

Method

Heat oil in a pan, add mustard seeds, when it splutters, add urad dal, red chilli, hing and green chillies.

Saute till urad dal turns golden brown, then add chopped beans, turmeric powder, salt needed and 1/4 cup of water.

Keep the flame low and let it cook covered till soft. Stir it now and then for even cooking. You can also sprinkle water if needed in between.

Once the beans becomes soft, add grated coconut, mix well and switch off the flame. Check for salt.

Serve it as an accompaniment with rice or chapati.

Another variation – Beans with moong dal (pasi paruppu)

Cook 2 tbsp of moong dal in a pan or kadai adding very less water. Dal should be cooked soft but not mushy.

After the beans is cooked, add cooked moong dal, grated coconut, mix well and remove from flame.

Note – You can make this in a pressure pan or small cooker without the whistle on low heat, stirring from time to time.
