Cornflakes mixture is very easy to prepare compared to the traditional South Indian mixture and is a favorite among kids. Now it is just a few weeks for Diwali, I am sure most of you must have geared up to celebrate the festival with excitement. Keeping that in mind, I have come up with this easy and tasty Cornflakes mixture for Diwali. Today let us learn how to make Cornflakes mixture (Indian) following this easy recipe.

Ingredients needed
Cornflakes – 4 cups
Peanuts -1/4 cup
Cashew nuts – 1/3 cup
Raisins – 1/4 cup
Fried gram – 2 tbsp (optional)
Curry leaves -few
Salt and Chilli powder to taste
Sugar -1 tsp (optional)
Oil for deep frying
Preparation
Wash curry leaves and dry it well.
Dry roast fried gram (pottu kadalai) and keep it aside.
Method
Heat oil in a kadai and fry cornflakes in batches. Remove from the kadai and drain excess oil on a paper towel. Alternatively you can take some cornflakes in a metal strainer and immerse it gently into the hot oil and fry it.
Fry peanuts, raisins, cashew nuts and curry leaves separately.
Now add everything including the roasted fried gram to the cornflakes. Add salt and chilli powder to taste.
If you like, you can also add a tsp of sugar to it. Mix everything well nicely. Your cornflakes mixture is ready in a few minutes time. I am sure you will love this recipe.

When I make it mixture looks very oily...can I tried this receipe n oven..
If the oil is not hot enough, it will absorb oil. Oil should be at right temperature. You can use a paper towel to drain excess oil . You can bake in oven. Raisins alone you add separately.

Should the sugar be crushed before adding ?
Not necessary.
