Garlic – 1 cup peeled
Tomato – 1 medium size
Red chillies – 6
Tamarind -small pea sized ball
Curry leaves – 1/4 cup
Oil -2 tbsp
Salt as required
For the seasoning
Oil – 1 tsp
Mustard seeds- 1/2 tsp
Method
Heat oil in a kadai/pan and fry the red chillies on low flame. Once done, remove it from the pan.
In the same pan, add garlic and saute until it turns slightly brown. Remove from pan.
Add curry leaves and tamarind and saute for a few seconds. Remove and keep it aside.
Now add 1 tomato fully (do not cut it) and cook on low flame on all the sides. The tomato will change color and the skin will slightly come apart. Switch off the flame. Leave it to cool.
Grind everything together adding salt to taste.
Heat a tsp of oil, add mustard seeds, when it splutters, add it to the chutney.
Serve this delicious garlic chutney with idli, dosa, adai or as a side dish for curd rice. This chutney also tastes delicious when mixed with hot steamed rice topped with a tsp of sesame seed oil.
