Aloo Bhindi Sabzi Recipe-Potato Lady’s Finger Curry-How to make Aloo Bhindi Fry

This is a very popular North Indian (Punjabi) dry sabji prepared with potatoes and lady’s finger. This sabji can be served as a side dish for rice, roti, parathas and can be used as a stuffing for chapati rolls. Today we will learn how to make Aloo Bhindi Fry/sabji following this easy recipe.

Aloo Bhindi Subzi-Aloo Bhindi Curry

   Ingredients needed

   Onion – 1 cup thinly sliced
   Green chilli – 1 slit
   Ginger garlic paste – 1 tsp
   Potato – 3/4 cup medium sized pieces
   Lady’s finger – 18-20 medium ones
   Salt as needed

   Spice Powder

   Turmeric powder -1/4 tsp
   Coriander powder – 2 tsp
   Chilli powder -1 tsp
   Garam masala powder -1/2 tsp

   For the seasoning

   Oil – 2 tbsp- 2 1/2 tbsp
   Cumin seeds/jeera – 1 tsp

Preparation 

Wash and wipe lady’s finger well with a clean kitchen towel. This step is important to prevent the lady’s finger from getting sticky while cooking. Discard the head and the tail and cut lady’s finger into 2 inch pieces.

Thinly slice onions. Wash, peel the skin and cut potatoes into medium sized pieces.

Method 


Heat 1-1 1/2 tbsp of oil and saute lady’s finger adding a little salt (uncovered) until they brown slightly. Keep it aside.

In a separate pan, heat 1 tbsp of oil, add cumin seeds, when it sizzles, add sliced onions and green chilli.

Saute until onions turn golden brown, then add ginger garlic paste and saute for a few more minutes.

Add cubed potatoes, turmeric powder, chilli powder, coriander powder, salt needed and cook covered until potatoes are half done. Stir in between to prevent it from getting burnt.

Then add the sauteed lady’s finger, garam masala powder, mix well and cook covered on low flame stirring from time to time until it is well cooked. Check for salt.

Delicious aloo bhindi sabzi is ready to be served as a side dish for chapati or rice.
