This dish can also be prepared with leftover rice or brown rice. Kids and adults will love this simple dish very much. According to the American Cancer Society “Broccoli is considered a good source of nutrients because it is rich in vitamin C, carotenoids (vitamin A-like substances), fiber, calcium, and folate. Broccoli is also a source of many substances called phytochemicals, or plant chemicals, that may have anticancer properties”. So why not include it in our diet on a regular basis.Today we will learn how to prepare broccoli rice following this easy recipe.

   Ingredients needed

   Basmati rice – 1 cup
   Broccoli florets- 1 cup
   Onion – 1 big
Ginger garlic paste – 1 tsp
   Green chilli – 2-3 slit
   Mint leaves – fistful
Coriander leaves – fistful finely chopped
Fresh Lemon juice – 1 tbsp
   Salt needed

   For the seasoning

   Oil – 1 tbsp
   Cloves – 2
   Cinnamon – 1 inch piece
   Cardamom – 1 (optional)

Preparation

Wash and soak basmati rice in 2 cups of water for 20 minutes. Cook basmati rice along with the water adding 1 tbsp of fresh lemon juice. Learn how to cook basmati rice. Once cooked fluff it with a fork and keep it aside.

Method

Heat oil, add cloves, cinnamon, cardamon, saute for 2-3 seconds and add finely chopped onions and green chillies.

Saute until onions turn pink and then add ginger garlic paste or finely chopped ginger and garlic (1 inch ginger and 1 tbsp of garlic minced).

Saute for a few more minutes, then add broccoli florets, finely chopped coriander, mint leaves and salt needed. Cover and cook until the broccoli  is fork-tender but still crunchy. (Broccoli gets cooked faster, so keep an eye on it. If overcooked, broccoli becomes soft and mushy and looses its nutrients and flavor. The broccoli should retain its crunchiness, so take care not to overcook the broccoli.)

Once the broccoli is slightly cooked, add the cooked rice and mix well. Serve hot with any tomato based gravy or raita.

Note – If preferred, you can add a little pepper powder.

  • KG:First of all I thank you for your very kind words :) Actually Kerala matta rice is very good for health and it is full of fiber . I read in wikipedia that there are instances of adulteration and normal rice is treated with chemicals and red oxides to give artificial color .You can buy organic rice in health stores.
