Snake gourd is known as “padwal” in Marathi and “Chichinga” in Hindi. Snake gourd is rich in fiber and low in calories. So it is great for weight-loss diets. The fiber in snake gourd is also helpful for those with diabetes. It’s high water content helps to cool the body and also beat the summer heat. This is a very simple stir fry prepared without onions. Today we will learn how to make snake gourd stir fry (Tamil Brahmin style) following this easy recipe.
Snake Gourd Stir fry/Curry
Prep Time: 10 mins | Cook Time : 30 Mins | Serves : 2
Ingredients needed
Snake gourd -3 cups chopped
Oil -2 1/2 tbsp
Turmeric powder – a pinch
Salt to taste
For the seasoning
Mustard seeds -1 tsp
Urad dal – 1 tsp
Red chillies -3
Hing- a pinch
Curry leaves – few
Preparations
Wash and cut the snake gourd lengthwise, remove the seeds and the white thread like fiber. Then slice it very thinly.
Recipe Instructions
Heat oil in a pan, add mustard seeds, when it splutters, add urad dal, red chillies, hing and curry leaves.
When dal turns golden brown, add the chopped snake gourd, turmeric powder and cook covered.
Once it is slightly cooked, add salt. Do not add too much water, then it will be liked boiled snakegourd. Just sprinkle little water now and then and cook covered stirring from time to time. If required, add another 1 tsp of oil and cook.
Serve as a side dish for sambar rice or rasam sadam or curd rice.
Variation – You can do this same stir fry with onions and also with dhal (which I will share it soon)
