Cracked Wheat Sambar Sadam-Broken Wheat-Samba Godhumai Rava Sambar Sadam-Low Fat Recipes
Broken wheat is known as “samba godhumai ravai” in Tamil and “dalia” in Hindi. It is rich in fiber and iron and is low in fat. It is very nutritious and also easy to digest. Being a health conscious person, I love substituting white rice with other grains and this is one of my comfort food. We all love it so much that it has become a regular feature in my home. This sambar sadam prepared with broken wheat and mixed vegetables is not only healthy but also quite filling. It is a perfect weight loss food as it has it has no cholesterol or saturated fat. Today let us learn how to prepare cracked wheat sambar sadam following our easy recipe with step wise pictures.

1 Ingredients needed
Samba Wheat Rava-1/2 cup
Tur dal -1/4 cup
Pearl onion -5-6
Mixed Vegetables -1/2 cup (mix of carrot, beans, potato)
Sambar powder -2 tsp
Turmeric powder -1/4 tsp
Salt needed- approximately 1 tsp flat
Tamarind – small gooseberry sized ball or 1/2 tsp tamarind paste
For the seasoning
Oil -2 tsp
Mustard seeds -1 tsp
Cumin seeds -1/2 tsp
Fenugreek seeds -1/4 tsp
Hing/Asafoetida – a pinch
Green Chilli- 1 slit
Curry Leaves- few
For Garnishing
Coriander leaves- finely chopped-2 tbsp
Ghee/clarified butter-1 tsp
Preparation
Wash cracked wheat, drain the water and keep it aside.
Soak tur dal in hot water (just enough water to cover the dal) for 20 minutes.
Soak tamarind in hot water and extract 1/2 cup of tamarind juice. Discard the pulp. If using tamarind paste, dilute 1/2 tsp of paste in 1/2 cup of water and keep it ready.
Chop all the vegetables into slightly bigger and chop pearl onions into half. If you keep everything ready before starting to cook, half the work is done.
Method
Heat oil in a pan, add mustard seeds, when it splutters, add jeera/cumin seeds. When jeera sizzles, add fenugreek seeds, hing, slit green chilli, pearl onions and curry leaves.
Saute until onions turn transparent. Then add all the vegetables (you can also add peas, cauliflower, capsicum etc), sambar powder, turmeric powder, salt needed (approximately 1 tsp flat for 1/2 cup cracked wheat) and mix well.
Then add 1/2 cup of tamarind water and boil for 5-6 minutes on medium flame or until the raw flavor of the tamarind goes.
Then add the washed cracked/broken wheat, soaked dal and 2 cups of water. Taste the water to check for salt. If the water is slightly salty, it will be perfect once the cracked wheat is cooked.
Pressure cook for 4-5 whistles. Once the pressure subsides, open the cooker, add a tsp of ghee (optional) and mix well.
Garnish with finely chopped coriander leaves and serve piping hot with any pachadi or raita of your choice. I made beetroot pachadi and it tasted great with cracked wheat sambar sadam.
Note – The consistency of sambar sadam should be semi solid.
Updated – Some write to me saying that the cracked wheat does not get cooked properly. In that case, you can dry roast the cracked wheat until hot to touch (do not brown it). Then use it. Follow the recipe as mentioned above.
