Ridge gourd is known as Peerkangai in Tamil, Turai in Hindi and Beerakai in Telugu and peechinga in Malayalam. It is a good source of dietary fiber. It is great for weight loss as it is low in saturated fat, cholesterol and calories. It is also rich in vitamin C, zinc, thiamin, iron, riboflavin, magnesium and manganese. It is said to have cooling properties. Today we will learn how to prepare this very easy and simple stir fry with ridge gourd.

 

 

Peerkangai Poriyal-Ridge Gourd Stir Fry

   Peerkangai-Ridge gourd -1/2 kg or 4 cups peeled and cubed
   Onion -1 big
   Green chilli – 4 slit
   Minced garlic – 3-4 cloves
   Turmeric powder -1/4 tsp
   Salt needed
   Grated coconut -1/4 cup

For the seasoning

   Oil -3 tsp
   Mustard seeds -1 tsp
   Curry leaves- few

Preparation

Peel the skin of ridge gourd, remove the seeds and cut it into cubes. You can use the seeds if they are tender.

Method

Heat oil in a pan, add mustard seeds, when it splutters, add finely chopped onions, slit green chilli, minced garlic and curry leaves. Saute until onion turns transparent.
Then add the chopped ridge gourd, turmeric powder and salt needed.

 

Cook covered on low flame stirring in between. This vegetable will ooze out water, so sprinkle water only if required while cooking.
Once the ridge gourd becomes tender and all the water evaporates, add grated coconut, mix well and remove from heat.

 

Serve this simple peerkangai/ridge gourd curry with rice or roti.

  • Hello, I tried this but the onion got burned after I added the peerkangai and it was cooking. What exactly am I doing wrong?

    • Cook on low heat. Sprinkle water if required though it is not necessary for peerkangai as it leaves water.
