During this season we get fresh radish (mullangi in tamil) with the leaves (greens/keerai). Most people use the radish and toss the leaves. The leaves are rich in calcium and have more vitamins and minerals than radish. Radish leaves contain dietary fibers which gives relief from constipation. The juice of leaves taken with buttermilk is said to remove toxins and is used to treat urinary disorder. Radish greens has high levels of anti-cancer compound. Go for organic radish when you plan to use the leaves. Today we will learn how to make mooli ka saag (a stir fry prepared with radish and its leaves) following this easy recipe.

Ingredients needed
Radish/Mooli – 3 cups chopped
Radish leaves -1 cup
Onion -2 finely chopped
Turmeric powder -1/4 tsp
Chilli Powder – 3/4 tsp or as needed
Salt needed
For the seasoning
Oil – 4 tsp
Mustard seeds- 3/4 tsp
Cumin seeds/jeera -1 tsp
Preparation
Wash, peel the skin and chop radish into medium sized pieces. Wash the leaves, discard the thick stalk and chop the leaves finely.
Cook the leaves in very less water. Once cooked drain the water and keep the leaves aside.
Method
Heat oil, add mustard seeds and cumin seeds, when it splutters, add onions and saute until onion turns transparent.
Then add chopped radish, turmeric powder, chilli powder and salt needed. Cook covered stirring now and then. If needed you can sprinkle water in between.
Once the radish is cooked, add the cooked radish leaves and cook covered for another 5 minutes.
Nutritious and healthy Mooli Ka saag is a perfect accompaniment to rice, rotis and parathas.
