If you are a regular reader of my blog, you will know that I have written a lot about quinoa. Quinoa (pronounced as KEEN-wah) is a rich source of protein and fiber. In short, it is a powerhouse of nutrition. It is not only versatile, it also tastes wonderful. These Quinoa apple bites are very healthy, delicious and also very easy to make. Cook quinoa, combine with the other ingredients, spoon the mixture into a muffin tin and bake. That’s it!! You can even cook quinoa ahead of time. These little quinoa bites are perfect for breakfast or snack. When I found the recipe here, I could not wait to try it. The combination of quinoa, apples, cinnamon and organic powdered jaggery was simply awesome.

Ingredients needed
Cooked Quinoa – 1/2 cup
Oats – 1/2 cup (quick cooking oats)
Cinnamon powder – 1/4 tsp
Nutmeg – 1/4 tsp
Brown Sugar or powdered jaggery – 1 1/2 tbsp
Granualted white sugar – 1/2 tbsp
Honey or maple syrup – 1 1/2 tsp
Apples -1/2 cup peeled and chopped
Egg -1 lightly beaten
Preparation
Cook quinoa. You can cook even ahead of time or use leftover quinoa. Check out my detailed post on How to cook quinoa. We need just half cup of cooked quinoa. Once cooked, leave it to cool.
Grease muffin cups or line the muffin pan with cupcake liners.
Pre heat the oven for 15 minutes at 180 degree C.
In a large bowl combine together, cooked quinoa, oats, brown sugar, white sugar, cinnamon powder and nutmeg.
Add peeled and chopped apples, lightly beaten egg, honey and mix until combined.
Fill each muffin cup to the top with the mixture. Bake for 15-20 minutes at 180 degree C or until a toothpick inserted in the center comes our clean.
When the muffins are done, remove from the oven and leave it to cool. When warm, just peel off the paper and dig in!! I loved it warm. Try these bites and enjoy!
Note – Apples should be sweet. I use organic powdered jaggery as I did not have brown sugar at home. With jaggery it tasted awesome.

Looks so yum and healthy. Can I make this eggless.
Egg is used for binding here. So egg is necessary.
What about using banana for blending?
I have not experimented with banana yet.
Flax seeds powder soaked in water till a gel is firmed subs for eggs. Or use egg substitute powder.
How many calories it has???
