Once you taste it, you will find yourself making these very addictive, simple and delicious herb roasted sweet potato wedges often. Today we will learn how to make sweet potato wedges (sakkaravalli kizhangu is known as sweet potato in English) following this easy recipe.

Ingredients needed
Sweet Potato (sakkaravalli kizhangu) -2 medium size
Olive oil -1 tbsp
Paprika or chilli powder as needed
Salt as needed
Oregano – 3/4 tsp
Preparation
Wash the sweet potatoes well. Cut off the ends and peel the skin. Then cut lengthwise and into wedges as seen in the picture below.
Pre heat oven at 200 degree C for 15 minutes.
Method
In a bowl, mix together olive oil, salt and chilli powder. Add the sweet potato wedges, herbs and mix well so that all the pieces are well coated with the oil and spices.
Arrange it in a single layer on a baking tray and bake in a pre heated oven at 200 degree C. After the first 15 minutes, remove the baking tray from the oven, turn over all of sweet potato wedges and bake again for another 15 minutes or until golden brown.
It can be had as a snack or as a side dish.
Tawa Roasted Sweet Potato Wedges
If you do not have an oven, it can be roasted in a shallow pan or tawa on low heat. Roast on all sides evenly by turning over the sweet potatoes. I tried both ways and loved both very much.
Variations – You can add any dry herbs of your choice. You can add garam masala, jeera powder and make sweet potato wedges with Indian spices. You can add salt and pepper powder alone for a simpler version.
