It is super easy to make, full of flavor and is loaded with tons of health benefits. Moreover it is gluten free. Quinoa is commonly available in black, white and red. I have used black quinoa to prepare this soup. Today we will learn how to make quinoa chickpea soup following this easy recipe with step wise pictures.

Ingredients needed
Quinoa – 1/2 cup
Vegetable Stock – 2 cups
Tomato Puree – 1 cup
Chickpeas (cooked) – 1/4 cup
Extra Virgin Olive oil – 1 tbsp
Onion -1 medium size
Garlic – 3-4 cloves
Carrot – 1
Salt to taste
Pepper Powder to taste
Basil – 1/2 tsp
Oregano -1/2 tsp
Preparation
Wash and soak chick peas overnight and cook until tender. If using canned beans, skip this step. Just rinse the beans.
Blanch tomatoes and extract it puree. Refer how to blanch tomatoes.
Wash quinoa and keep it aside for 10 minutes. You can use any quinoa (black, red or white)
Chop onion, carrot, garlic and keep it aside.
Method
Heat oil in a pan, add onion, garlic and saute until onion turns transparent.
Add chopped carrots and cook for a few minutes.
Add rinsed quinoa, vegetable stock, salt needed and tomato puree.
When it starts boiling, simmer and cook until the quinoa is cooked through.
Add cooked chickpeas, pepper powder, basil, oregano and cook for another 2-3 minutes until everything gets mixed well and the soup is piping hot.
Healthy, filling and delicious chickpea quinoa soup is ready to be served.
Serve this soup piping hot with crusty bread on the side.
