Ingredients needed
Baby Corn – 8
Turmeric powder – a pinch
Bengal gram flour – 2 tbsp (kadalai mavu)
Rice flour – 1 tbsp
Ginger-garlic paste -1/2 tsp
Coriander powder – 1 tsp
Chilli powder – 1/2 tsp
Tamarind water/extract – 1-2 tbsp
Salt as needed
Oil for shallow frying
Chat masala – a pinch
Preparation
Bring water to rolling boil with a pinch of turmeric powder and little salt. Switch off the flame and then add the cleaned baby corns. Let it remain for 3 minutes in that water. Then drain the water completely.
In a shallow bowl, mix together bengal gram flour, rice flour, ginger-garlic paste, coriander powder, chilli powder, tamarind water and salt needed.
Add the baby corn to the above and mix well so that the baby corn is well coated with the mixture.
Method
Heat 5-6 tsp of oil and shallow fry the baby corn on low flame turning over the sides. Brown them evenly on all sides. It needs patience but worth the effort.
Sprinkle chaat masala and enjoy it hot with a cup of tea or coffee. You do not need any side dish for this but if needed you can have it with tomato ketchup.

Yes, you can bake also. Personally I prefer tawa fry.
hi, could you please tell me, how long the mixed corn should be be kept aside, and also shall v use lemon juice instead of tamarind water..
10-15 minutes. You can add few drops of lemon juice.
