The vegetables are loaded with vitamins, mineral and dietary fiber. Studies suggest that a healthy diet may even help kids do better in school. Today we will learn how to make healthy, tasty and colorful Vegetable Paneer Masala Toast Sandwich following this easy recipe.

Vegetable Paneer Masala Toast Sandwich

   Ingredients needed

   Whole Wheat Brown bread – 6 slices
   Oil – 1 tbsp
   Onion – 1/2 cup chopped
   Green chillies – 1 finely chopped
   Ginger garlic paste – 3/4 tsp
   Tomato – 1
   Carrot – 1 cup grated
   Cabbage – 1/3 cup finely chopped
   Capsicum – 1/3 cup finely chopped
   Sweet Corn kernels – 1/3 cup (boiled)
   Paneer/Indian cottage cheese- 1/4 cup crumbled
   Coriander Leaves – 2 tbsp finely chopped

   Turmeric powder – a pinch
   Chilli powder – 1/2 tsp
   Garam Masala Powder – 1/2 tsp
   Tomato Ketchup – 1 tbsp
   Salt needed

   Butter as needed for toasting bread

Preparation


Cut all the vegetables finely. Grate carrot and crumble paneer and keep it ready. If using frozen sweet corn, rinse it well and use it. Look at the picture below. It looks so colorful.

Method 

Heat oil in a pan, add onion, green chilli and saute until onions turn transparent.

Add ginger garlic paste and saute for a few more seconds.

Add chopped tomatoes, chilli powder, garam masala powder, turmeric powder, tomato ketchup and cook until tomatoes become soft.

Add the rest of the vegetables (cabbage, carrot, corn, capsicum), salt needed and cook until the vegetables become soft but not mushy.

Add finely chopped coriander leaves, and crumbled paneer. Mix well and remove from heat.

Take 2 bread slices, apply butter on both sides of the bread slice.

Heat a tawa, toast both sides of the bread slice. Then spoon 2 tbsp of the vegetable paneer mixture on top of the bread slices and press it well with a spatula (picture below).

Serve hot as an open sandwich. Kids and adults will love this for sure.

Repeat the same process for the rest of the bread slices. Enjoy!!

Note – Instead of paneer, egg lovers can use scrambled eggs.

Read the ingredients on the pack before buying bread as even most wheat bread has all purpose flour (maida) in it. Buy organic bread, if you can get it in your place.
