Broccoli Paratha

Ingredients needed
For the Dough
Whole Wheat flour/Multigrain atta – 1 1/2 cup
Oil – 2 tsp
Salt – 1/4 tsp
Warm water as needed
For the Stuffing
Onion – 3/4 cup chopped
Green Chilli – 2 finely chopped
Ginger-Garlic paste – 1/2 tsp
Coarsely ground Broccoli – 1 cup
Salt to taste
Spice Powder
Chilli powder -1/2 tsp
Turmeric Powder – 1/4 tsp
Cumin/jeera powder – 1 tsp
Kitchen King Masala powder/Garam masala powder -1 tsp
For the Seasoning
Oil – 1 tbsp
Cumin seeds – 1 tsp
Oil/ghee/butter for tawa frying parathas
Preparation
Bring water to boil with a pinch of turmeric powder and little salt. When it starts boiling, add the washed broccoli florets to it. Let it be in water for 1 minute. Then drain the water completely and pat the florets dry with a kitchen towel.
Blend it coarsely and keep it aside.
Stuffing Preparation
Saute until onions turn transparent.
Add the coarsely ground broccoli and all the spice powder mentioned under “Spice Powder”. Add salt to taste and cook until all the moisture evaporates and the mixture becomes dry. Our broccoli stuffing is ready. Leave it to cool.
Method
Now pinch 2 golf ball sized pieces of dough and and make smooth balls.
Flatten the ball, dust wheat flour and roll it out into a small circle (approximately 4 inches in diameter) using a rolling pin. Repeat the same for the other ball
.
Place 2 tbsp of stuffing on one of the rolled out dough, spread the stuffing evenly leaving a little space around the edges as shown below and cover it with the other rolled out dough.
Press the edges so that it sticks well. Now dust flour and roll it out into a circle of 6 inches in diameter with the stuffing.
Heat a tawa, place the rolled out paratha, when you see bubbles forming on the surface, spread a tsp of oil and flip it over to the other side.
Spread another tsp of oil and cook both the sides until brown specks appear. Repeat the same process above for the rest of the dough.
Serve with pickle or plain yogurt or raitha.
If not serving immediately, wrap it in an aluminium foil and keep it in a container for it to stay soft.
You can pack this nutritious and filling paratha for office or school lunch also. Use aluminium foil for packing the parathas.
