Egg roll also known as egg kathi roll or egg frankie is a very popular street food and also my kid’s favorite dish. It is so easy to made at home and tastes delicious. It is quite filling that it can be had for breakfast or for lunch. I have used vegetables and eggs to make this delicious kathi rolls. You can skip eggs and make this as vegetable chapati rolls also. Today we will learn how to make egg kathi rolls following this easy recipe with step wise pictures.

Padhu Sankar Ingredients needed
Chapatis – 3
Egg – 1 per kathi roll
Pepper powder – 1/4 tsp
For the Stuffing
Oil – 1 1/2 tbsp
Onion – 1 big
Ginger – 1 inch piece
Garlic – 4 cloves
Green Chilli -1
Capsicum – 1/2 a medium size
Cabbage – 1/3 cup shredded
Tomato -1
Salt needed
Coriander leaves – 2 tbsp finely chopped
Tomato ketchup – 11/2 tsp
Spice Powder
Chilli Powder – 1/2 tsp
Coriander powder – 2 tsp
Turmeric Powder – 1/4 tsp
Garam Masala Powder – 1/4 tsp
Oil for making kathi rolls
For Garnishing
Thinly sliced Onions
Preparation
Break an egg into a bowl and beat it adding salt and pepper powder. Keep it aside.
Finely chop ginger, garlic and green chillies. Chop rest of the vegetables thinly lengthwise.
Method
Heat oil in a pan, add onions, ginger, garlic, green chillies and saute until onions turn translucent.
Add thinly sliced capsicum, cabbage and saute on high flame for a few minutes.
Add tomatoes, salt needed and all the spice powder.
Saute on high flame. Add chopped coriander leaves, tomato ketchup, mix well and switch off the heat. The vegetables should retain it crunchiness, so avoid overcooking.
Now our filling and the chapatis are ready.
Heat a tawa, apply half a tsp of oil all over and pour the prepared egg mixture over it.
Then place the chapati on top of the egg mixture and press it well.
Once the egg gets cooked, flip it over to the other side, cook for 2-3 seconds and remove from heat.
Now place 2-3 tbsp of the prepared filling as show in the picture below.
Then place thinly sliced onions on top of it.
Roll the chapati tightly, cut into half and enjoy it hot. Alternatively you can fold the chapati below, roll it and wrap it in an aluminium foil so that you can hold it and enjoy the egg vegetable kathi rolls hot.
Repeat the same process for the rest of the chapatis.
Variation – You can make the filling Indo-Chinese style by using chilli sauce, soya sauce, pepper powder instead of coriander powder, chilli powder and turmeric powder.
