Kalkandu pongal (sugar candy pongal) is a creamy and delicious dessert prepared with rice, milk and rock sugar candy. It is very easy to make and tastes divine. This is one of my favorites, next to sakkarai pongal. Try this Kalkandu pongal for a change this pongal festival and I am sure you will love it. Today we will learn how to make kalkandu pongal following this easy recipe.

Ingredients needed
Raw Rice – 1/2 cup
Moong dal/ Pasi paruppu – 1 1/2 tbsp
Milk – 1 1/2 cup
Rock sugar candy/ Kalkandu – 3/4 cup
Ghee – 3 1/2 tbsp
Cashew nuts – 8-10
Raisins – 15-20
Cardamom Powder – 1/4 tsp
Saffron – 2-3 strands
Preparation
Dry roast rice and dal separately until hot to touch. Do not over roast it. It just needs to be slightly hot.
Wash rice and dal together and cook with 1 cup of milk and 1 cup of water. I pressure cooked keeping it in a separate vessel for 3 whistles. You can cook directly in the cooker.
Once the pressure subsides, open the cooker and mash the dal and rice when it is hot.
Add the remaining 1/2 cup of milk and mash it well.
Method
Heat a tbsp of ghee and fry cashew nuts until light golden brown. Add raisins and fry until it puffs up.
Then add the mashed rice and dal mixture.
Add kalkandu or rock sugar candy (I used diamond kalkandu) and cook on medium heat until the sugar candy dissolves.
Add remaining ghee, cardamom powder and mix well.
Finally add saffron strands, mix the pongal well and remove from heat.
Creamy and delicious Kalkandu pongal is ready. It tastes heavenly!! You can enjoy it warm or chilled.
Note – Rice is to water ratio is 1 : 4. As it cools, this pongal will thicken. If needed, you can add a little milk and reheat it. (Kalkandu is crystallized form of sugar).
