Couscous Upma Recipe-Indian Style Couscous Upma-Couscous with Vegetables

Upma has always been my favorite, be it rava upma or semiya upma or idli upma or arisi upma or couscous upma. Couscous upma is very easy to make and makes a perfect breakfast or dinner.  It is much quicker to prepare than rice. If you are new to couscous, check out my first post on couscous. If you are bored of eating rava upma or semiya upma, try this couscous upma for a change. Today let us learn how to make couscous upma following this easy recipe with step wise pictures.

Couscous Upma-Indian Style

   Ingredients needed

   Instant Couscous – 3/4 cup
   Salt -1/4 tsp
   Water -1 1/2 cup

   Onion – 2 medium size
   Green chilli – 2 finely chopped
   Ginger – 1 inch piece (peeled and chopped)
   Salt as needed

   Beans – 1/4 cup chopped
   Carrot – 1/4 cup chopped
   Potato – 1/4 cup chopped
   Cauliflower florets- 1/3 cup
   Green Peas – 1/3 cup
   Capsicum – 1/3 cup chopped

   For the seasoning

   Oil – 2 tbsp
   Mustard seeds – 1 tsp
   Urad dal – 1 tsp
   Curry leaves

   For garnishing

   Coriander leaves – 2 tbsp finely chopped

Preparation

Chop onions, beans and capsicum. Peel and chop carrots and potatoes. Blanch cauliflower florets and keep it aside. Par boil peas and keep it aside. If using frozen peas, skip the step. Learn how to preserve and freeze peas.


Take couscous in a bowl. Add 1/4 tsp salt to it.


Bring water to rolling boil. Add to the couscous, mix well and keep it covered for 10 minutes.


After 10-15 minutes – fluff couscous with a fork and our plain couscous is ready.

Method 


Heat oil in a pan, add mustard seeds and urad dal, when dal turns golden brown, add onion, green chillies, ginger and curry leaves.

Saute on medium heat until onions turn transparent.


Add potatoes, carrots and beans. Mix well, sprinkle water and cook covered, stirring in between until the vegetables are soft but not mushy.


Once the vegetables are soft, add the cauliflower florets, peas, capsicum and salt needed. Mix and cook for another 3-4 minutes. See to it that you do not overcook the capsicum.


Add the couscous and mix gently.


Garnish with coriander leaves and enjoy it hot. You can have any chutney or pickle as a side dish for this or enjoy it as such.

  • what is coscous is this கசகசா as white granules wich we add to masala dishes to give flavour

    • It is not kasa kasa. Couscous is a type of North African semolina in granules made from crushed durum wheat.Kindly check out my post on how to cook couscous for more details.
