Kothavarangai Kara Kulambu-Cluster Beans Puli Kuzhambu Recipe

Kothavarangai Kulambu (puli kulambu) is a spicy, hot and delicious South Indian Kulambu made with cluster beans. We also call it kothavarangai vathal kulambu. It tastes heavenly along with rice. Today we will learn how to make cluster beans kuzhambu following this easy recipe with step wise pictures.

   Ingredients needed

   Tamarind – 25 grams or 1 small lemon sized ball
   Pearl Onion – 10-12
   Cluster beans – 70 grams or 15 tender cluster beans
   Sambar powder – 2 tbsp

   For the seasoning

   Sesame Oil – 3 tbsp
   Mustard seeds – 1 tsp
   Fenugreek seeds – 1/2 tsp
   Hing – a generous pinch
   Curry leaves – a sprig
   Salt as needed

Ingredients needed for making cluster beans kuzhambu kept ready below.

Preparation 


Peel pearl onions and cut it into half. Sting cluster beans and cut it into 2 inch pieces.

Soak tamarind in a cup of hot water for 15-20 minutes. Extract juice, add more water and extract more juice. Discard the pulp. We need 2 cups of tamarind extract.

Method


Heat oil in a kadai, add mustard seeds, when it splutters, add fenugreek seeds, hing and curry leaves.

Add pearl onion, cluster beans and saute until onions turn transparent.


Add sambar powder and salt needed (I usually add 1 tbsp flat rock salt for this measurement).


Saute for 2-3 seconds and then add tamarind extract.


Once it starts boiling, reduce the heat and cook on medium heat until the kulambu thickens to a saucy consistency.


Delicious and tasty cluster beans kuzhambu is ready to be served along with rice.

Note – You can make this kulambu without onion also.
