Mango Rava Cake Recipe-Eggless Mango Semolina Cake in Pressure Cooker

This mango rava cake is made with semolina (rava/sooji) and mango pulp. It is easy to make, moist and very delicious with the flavor of mangoes.When I saw this easy cake in bellyrulesthemind, I could not wait to make this cake. So easy and so tasty, you need just one bowl to make this cake. For a change, I choose the pressure cooker to bake this cake as it will be useful to many who do not have an oven at home. Today we will learn how to make mango sooji cake at home following this easy recipe.

Eggless Mango Sooji Cake

   Ingredients needed

   Fine Semolina/Fine rava -1 cup
   Mango Pulp – 1 cup (thick)
   White Sugar – 3/4 – 1 cup
   Oil – 1/4 cup any flavorless oil
   Cardamom powder – 1/2 tsp
   Baking powder – 3/4 tsp
   Chopped nuts – 1/3 cup (optional)

Preparation 

Keep all the ingredients ready. Make sure to use fine rava. As I could not get fine rava in my place, I ground the upma rava to a fine texture (not powder) and used it to make this cake.

Powder sugar and keep it ready. If you prefer it too sweet, you may add 1 cup of sugar. It also depends on the sweetness of the mangoes.

Sliver almonds and pistachio and keep it ready.

Grease and flour the baking tin as you usually do when baking cakes or line the pan with parchment paper.

I used 2 medium sized alphonso mangoes to get 1 cup of mango pulp. Do not add water while pureeing the mangoes as the mango pulp should be thick and not watery. It is preferable to use alphonso mangoes as it gives a nice color and taste to the cake.

Method 


In a bowl, mix fine rava, powdered sugar, cardamom powder and baking powder well.


Add oil to the above and mix well.


Add mango pulp and mix well.


Let it sit for 15 minutes.

After 15 minutes


Pour it in a greased tray and garnish with thinly sliced almonds and pistachio.


Take a pressure cooker (preferable an old cooker), place the perforated plate/or any stand at the bottom of the pressure cooker. I placed 2 perforated plates at the bottom to give height.

Heat the cooker on high flame for 5 minutes.

Then reduce the heat to low and place the baking tray inside the cooker
on the stand/perforated plate carefully with a tong (as the cooker will be very hot).


Close the cooker. Do not use gasket or weight. Keep it on low heat and let the cake bake. It will take 30-35 minutes for the cake to bake but keep an eye after 20 minutes. Bake until a toothpick inserted in the center of the cake comes out clean.

Allow the cake to cool completely. Then cut and enjoy any time of the day!!

To Bake the cake in an oven


Preheat the oven at 180 degree C. Then bake at 180 degree C for 25-30 minutes or until a toothpick inserted in the center of the cake comes out clean.

Note – Use old pressure cooker for baking cakes as the cooker will get spoiled. You can layer sand and then place the stand as I have done in my vanilla cake in pressure cooker.

    Vaishnavi - Water is not required. That is the reason, I have suggested to use old cooker.

    Sumana - You can use saffola or sunflower oil .

    Geetha - You can also use canned mango pulp.

  • Can we use microwave, instead of oven? If so, please suggest microwave based method.

    • I baked this cake in microwave at 180 Deg C in convection mode...it came out exceptionally well...tastes good with Alphonsa...thank for a superb recipe..can we try with honey instead of sugar to make it a healthier version?
