Ingredients needed
Butter – 85 grams
Brown Sugar – 1/2 cup powdered
Egg – 1
Rolled Oats (old fashion oats) – 1/2 cup + 3 tbsp
Cranberries – 1 cup
Walnuts – 1/2 cup
Vanilla essence – 1/2 tbsp
Whole wheat flour – 1/2 cup + 1 1/2 tbsp
Salt – 1/4 tsp
Baking powder – 1/4 tsp
Baking Soda – 1/4 tsp
Cinnamon powder – 1/2 tsp
Preparation
Chop walnuts into small pieces.
Sieve together wheat flour, baking powder, baking soda, salt and cinnamon powder. Keep it aside.
Bring all the ingredients to room temperature.
Pre-heat oven at 180 degree C for 10 minutes.
Line baking tray with parchment paper.
Method
Beat together butter and sugar until smooth.
Add egg and beat again. Add vanilla essence and mix to combine.
Add rolled oats, cranberries and flour (mix of whole wheat flour + baking soda +baking powder + salt + cinnamon powder).
Add chopped walnuts and mix well to combine.
Drop heaped tablespoon of dough on the parchment lined baking tray, leaving enough space in between. Then flatten it a little.
Bake in preheated oven for 15 minutes or until edges starts browning. (Reverse the tray after the initial 7 minutes of baking and continue to bake until edges starts to brown).
Remove from the oven and let the cookies cool on the pan. Then transfer to a wire rack to cool completely. Enjoy!!
Storage – Store it in an airtight container. Stays good for 3-4 days at room temperature.
Variations – You can substitute raisins in place of cranberries.
You can make these cookies with all purpose flour also.
It is preferable to use rolled oats to get a good texture. But if you cannot get rolled oats, you can use quick cooking oats also.

Yes, you can. You can even make dosas with that flour by mixing it with a little urad dal batter or dosa batter.

Yes, you can. Follow the same method as given in my vanilla cake in pressure cooker. Keep checking as I am not sure of the time.
The cookies turned out yummy. I was planning to do half the qty but then did the whole thing and it got over soon! My kids are pestering me to do it again!! Try substituting 1/4 cup milk for 1 egg for cookies.
