In India, it is not common to have an oven at home, that is the reason I posted cake in pressure cooker long time back. From that time, I got queries like – can be bake chocolate cake in cooker, can we make carrot cake in cooker, can we make cookies in cooker, can we bake muffins etc. That is the reason I kept the title as Cookies in Cooker which means, you can bake any cookies in cooker following the method given below. (also cookies with egg, eggless cookies). I got lot of request asking me to post how to bake/make cookies in cooker. Today we will learn how to bake cookies in cooker following this easy method.

Ingredients needed
Whole wheat flour – 1/2 cup
Melted ghee or butter – 3 tbsp
Salt – a pinch
Sugar (powdered) or powdered jaggery – 1 1/2 – 2 tbsp
Vanilla essence – 1/2 tsp
Preparing the cooker for baking cookies
Take a pressure cooker or any thick bottomed pan, spread a layer of sand or salt (about 1 inch) inside the cooker.
Then keep any stand or perforated plate which comes with the cooker. I kept two such plates to raise the height.
Pre heat the cooker (or any thick bottomed pan) with the sand/salt on high flame for 10 minutes.
Method
Take melted ghee in a bowl, add powdered sugar or organic powdered jaggery, vanilla essence and salt. Mix well.
Add wheat flour and mix well to form a dough. You do not have to knead the dough. Keep it covered in the refrigerator for 10 minutes.
Divide the dough equally, form balls and flatten it. You can make a design with a fork, after flattening it as I have done.
Grease an aluminium cooker container or any aluminium tin, place the cookies on it leaving enough space between the cookies.
Then place the tin inside the cooker (or heavy bottomed pan) using tongs as the cooker/pan will be very hot.
Reduce the heat to low and close the cooker without weight/whistle and gasket. If you are using heavy bottomed pan, cover the pan with a lid
Bake for 15 minutes or until the cookies/biscuits starts to brown near the edges. Once the bottom starts browning, switch off the cooker and let the cookies be inside the cooker for 5 minutes. It took 20 minutes for me. The timings will vary depending on the size of the cooker, the amount of heat etc.
Then remove the cookies gently and place it on a wire rack to cool completely. The cookies will be soft but once it cools it will become crisp.
Storage – Once it cools, you can store it in an airtight container.
Note – You can use the same salt and sand over and over again for baking in cooker.
Use an old cooker as baking in cooker often, will damage the cooker.
You can bake any cookies, cakes, muffins following the above method.
You can add coarsely powdered nuts to the cookie dough. I baked 2 batches – one plain batch and other with cashew nuts, both in pressure cooker following the above method.
Do keep an eye on the cookies after 10 minutes of baking.

No, you should not keep it directly. If you do not have that stand, any other stand or even a small vessel will work.Place a small stainless steel or aluminium vessel and then place the baking tin or plate.

I have an aluminium idli stand. Can I try these in that??
Instead of the cake tin, you want to use aluminium idli stand - You can use an aluminium plate instead of an idli stand. I don't think you can use idli stand as there will be holes in it.
No...It doesn't have holes like those steel ones'...that's why...
Then you can try. If it is steel, cover it with an aluminium foil.

Is it possible to try in electric cooker
I don't think it will work as the cooker will get damaged.
I was not able to form balls and flatten it. Got broke. Where did i go wrong? Pls help. Also after taking out from frigde it was hard.

It will be a bit hard after taking from the fridge. If it is kept outside for 4-5 minutes, it will soften, then you can make balls and flatten it.

Is it necessary to use aluminium tin? I got steel tins with my cooker. Can i use steel plates/tins to bake the cookies?
Use aluminium vessel/tray for best results or cover your steel plate with aluminium foil.
