Kasi halwa is a traditional South Indian sweet prepared with ash gourd. It is usually served at South Indian weddings. It can be prepared for any special or festive occasions. It is very easy to make and tastes delicious. Today we will learn how to make Kasi halwa with step wise pictures following this easy recipe.

Ingredients needed
Grated Ash gourd – 1 cup (after squeezing water)
Sugar – 1/2 cup
Lemon juice – 3 drops
Ghee – 2 tbsp
Saffron – 6-7 strands
Cardamom – 3-4 pods
Cashew nuts – 5-6
Preparation
Soak saffron strands in a tsp of hot water and crush it slightly. Peel the cardamom pods and powder cardamom.
Peel the skin, discard the seeds and grate ash gourd (white pumpkin).
Squeeze out the water from the grated ash gourd using a soft cotton cloth. (I got 1 cup of squeezed out grated ash gourd). Discard the water or use it to make buttermilk.
Method
Heat a tsp of ghee in a pan and fry cashew nuts until golden brown. Remove from pan.
In the same pan, add 2 more tsp of ghee and saute the grated ash gourd and cook on low heat stirring continuously until it changes color to pale yellow and the vegetable becomes tender.
Once the vegetable is well cooked (you can also check by tasting it), add saffron, sugar and lemon juice.
Once sugar is added, the mixture will become watery. Cook for a few minutes on low heat.
Then add the rest of the ghee and continue to cook until the halwa thickens and starts to leaves the sides of the pan.
Add cardamom powder, cashew nuts and mix well.
Kasi halwa is ready. Enjoy making this easy halwa for Diwali.
Note – You may add more sugar than mentioned if your prefer it too sweet.

Amazing recipe
Outcome was good . But why do we add lime juice ?
Lemon juice is added to prevent sugar from crystallizing.

I was not a habitual cook. but thought for kids to eat ash gourd this is the right way .. your recipe is quick and I ended up with a delicious alwa..my 18month old daughter loved it.. nothing comes the way than a home cooked sweet dish.. thanks

I'm getting a raw after taste what should I do to avoid it
Saute the grated ash gourd well to avoid raw taste.
