Ingredients needed
Coriander seeds – 3 tbsp
Cumin seeds/Jeera – 1 tbsp
Fennel seeds/Saunf – 1 tsp (optional)
Whole black peppercorns – 1 tsp
Dry red chillies – 8-9
Cinnamon – 1 inch piece
Cloves – 3
Cardamom – 2
Bay leaves – 2
Method
Dry roast coriander seeds, cumin seeds, fennel seeds, black pepper and red chillies on medium heat stirring continuously until you get a nice aroma. Remove from the pan.
In the same pan, dry roast cinnamon, cloves, cardamom (without the pods) and bay leaves together.
Once it cools, dry grind both together to a slightly coarse powder.
Use this flavorful, homemade kadai masala powder when making both vegetarian and non vegetarian kadai recipes.
If you have no time to make this masala powder, you can also prepare like I have made my kadai paneer but adding freshly prepared masala gives a nice flavor to the dish.
