Potato stew/ishtu is a very simple mildly spiced dish made with potatoes and coconut milk. It is a fantastic side dish for appam, idiyappam and even chapathi. It is easy to make and tastes very delicious.
- 3 Potatoes (medium size)
- 1 Onion (thinly sliced)
- 3 Green Chilli slit
- 1 cup Thin diluted coconut milk
- 1 1/4 cup Thick coconut milk
- 1/2 tsp Coriander powder
- Salt to taste
- 2 tsp Coconut oil
- 1 inch Cinnamon
- 2 Cloves
- 1 Bay leaf
- 1/2 tsp Fennel seeds (sombu)
- Curry leaves a sprig
- 1 tsp Coconut oil
- 1 sprig Curry leaves

Wash and peel the skin of potatoes. Chop it into medium sized pieces. Slit green chillies and thinly slice onions.

Extract thin and thick coconut milk. Check how to extract coconut milk.

Heat a tsp of coconut oil in a pan, add cinnamon, cloves, bay leaf and fennel seeds.

When fennel seeds splutters, add onion and green chillies. Saute until onion turns transparent. (do not brown the onions).

Add the potato cubes, coriander powder, salt needed and thin coconut milk.

Cook until potatoes are soft. You can also pressure cook for 3 whistles.

Once cooked, slightly mash a few potato pieces.

Add thick coconut milk and simmer for a minute.

Add a sprig of curry leaves and drizzle a tsp of coconut oil. Stew should be thin.

Serve with appam or idiyappam or chapati.

Fantastic !! I make this the same way :)) except that I don't add cinnamon and bay loeaf:)
For pumpkin pulipu kootu we can try curry vadam (made of karamani,Udit dal, chillies dried in sun and stored). It will taste yummy.
