Here are a few Kitchen tips to make your time in the kitchen easier
- Add 2 tsp of water to the egg mixture to get fluffy omelette.
- To peel baby onions/pearl onions easily,soak them in cold water for 20 minutes.
- Use warm water for kneading dough to get soft rotis.
- Add a pinch of salt to the water while boiling eggs to prevent the egg shells from cracking.
- Add a little rice flour to the wheat flour while kneading to get crispy pooris.
- Add a few pieces of raw potato(skin peeled) to remove excess salt in the dish.
- To powder 4-5 cardamoms- put it on a flat surface and powder it along with sugar using a rolling pin.
- Add a tsp of oil or a tsp of lemon juice while cooking rice to prevent the grains from sticking.
- While cooking ladyfingers, add a few drops of lemon juice or a tsp of yogurt to avoid becoming sticky.
- To reduce the risk of flatulence while having legumes, change the water 2-3 times during the soaking process.
- Before making dosas, add 2-3 drops of oil on the tawa, then rub with half an onion, to prevent the dosas from sticking to the tawa.
- Add a pinch of sugar while boiling green peas to retain their green colour.
- To ripen fruits faster, wrap them in a newspaper and keep them in a warm place for 2-3 days.
- To set curd faster, add a slit green chillie to it.
- If you have excess lemons, squeeze the juice, add salt and deep freeze it in an ice tray. Use it to make juice or add 2 cubes to your lemon rasam . Those lemon cubes will stay good for 10 days.
- For onions to brown quickly, add salt to it while cooking.
- Most of the Indian gravies have certain things in common. You can prepare the basic gravy and freeze it for a few days in case if you are too busy or have to prepare it in the early hours.
Heat oil, add finely chopped chillies, finely chopped onions,finely chopped tomatoes/tomato puree, salt , chillies powder, cook till oil separates and freeze it .When needed, warm it and have it as such or add potatoes or paneer or anything vegetables you prefer to the gravy and season it.
- Soak almonds in hot water for 15 minutes to remove its skin easily.
- You can use the water in which dal is cooked as a stock for your soups.

TO MAKE CORIANDER POWDER IS IT NECESSARY TO ROAST CORIANDER SEEDS???

Dry coriander seeds in the sun well for 2 days and powder it . I usually buy 1 kg,dry it well in the sun and give it in the flour mill for grinding.
So it is not necessary to roast it .
But if there is not much sunlight in your place, you can roast it and powder it. That gives a different taste. Hope this helps

Nice tips..In one of your tip you have mentioned that in order to ferment curd faster a green chilly could be added. But while doing so my personal exp stated that the curd catches the smell and taste of the chilly not liked by many. Instead a red chilly could be used giving us the same result.

-cooking beans or carrots in an open pan till water evaporates, retains their color
-adding 1/4tsp of sugar n 1/4tsp of ghee while making dough for puris, enhances taste n crispness
-pressure cook dall wid 1/4tsp turmeric n 1/4tsp oil, to get soft n wel cookd dal
-always chop/grate/grind n store ginger in refrigerator
-keep fresh coriander wrapped in news paper in d door of ur refrigerator
-keep dried n powdered curry leaves, dried n powdered fenugreek seeds… nd add to gravies to enhance taste n for heath benefits

Dear padhu,am unable to make dosas in a iron cast tawa.the dosas stick on to the tawa.however I can't spread onion on the tawa can u suggest some alternative tips plz

Abirami – I will be making a detailed post on how to season cast iron tawa. Anyway for now – 1. if you are a vegetarian, try making adai in it first. If you are a non vegetarian, make omelet in this. After that if you make dosa, it will come out well.
2. Rub half an onion with a little salt before preparing dosa and then wipe it off with a cloth.

Hi Padhu, how are you? 2 weeks back I extracted the lemon juice from lemons at mothers house.i stored in plastic bottle and placed in fridge. i didn't add any salt to lemon juice. One week ago,I brought lemon juice bottle from my mother house to my house where I travelled 7 hrs in ac car.After reaching to my house I keep the lemon juice bottle in fridge.when I open the lemon juice bottle cap I feel different smell.i asked my husband to smell it he said lemon juice is good.when I opened the cap gas is coming . It means lemon juice is good . How I come to know whether the lemon juice is good or not? I will drink daily honey,lemon juice water because of that reason I didn't add salt Padhu.

You have to deep freeze the lemon juice with salt. Salt acts as a preservative. You can also store lemons as such in the freezer. It will last even longer.

Thank you so much for liking my recipes. The oil should be hot but not too hot or smoky. If the oil is not hot enough, the chips will drink lot of oil.
