Vegetable Upma-Vegetable Rava Upma

Ingredients needed
Semolina/ravai/sooji -1 cup
Onion – 1
Green chilli – 2 finely chopped
Ginger – 1 inch piece finely chopped
Carrot – 1 medium size
Capsicum – 1/2
Potato (small) – 1
Fresh/frozen Peas -10-15
Tomato – 1 small (optional)
Beans – 4-5
Ghee – 1/2 tsp
Salt needed
For the seasoning
Oil – 2 1/2 tbsp
Mustard seeds – 1 tsp
Urad dal – 1 tsp
Red chillies – 1-2
Asafoetida – a pinch
Curry leaves – a sprig
Preparation
Dry roast sooji until hot to touch. Since I had bought double roasted sooji, I skipped this step.
Chop all the vegetables finely and keep it aside.
Method
Heat oil in a pan/kadai, add mustard seeds, when it sizzles, add urad dal, red chillies, asafoetida and curry leaves.
When urad dal turns golden brown, add finely chopped onions and sauté till it becomes transparent.
Add ginger, green chillies and sauté a for a few more minutes.
Add all the vegetables and cook covered for 2-3 minutes. (Do not over cook).
Add 2 cups of water, needed salt and bring it to boil. When water starts boiling, add ½ tsp of ghee. Taste the water to check for salt, if it is slightly salty, it will be perfect once we add rava.
Reduce the heat to low, add the sooji/rava gradually with one hand and stir continuously with the other hand, so that it does not form lumps.
Cover and cook on low heat. Once the water is absorbed, mix well and cook covered on low heat for 6-7 minutes, stirring in between.

Hemnaad – I use these Measuring cups and spoons for all my recipes. In this recipe, you can use any cup measurment. 1 cup is usually 200 grams but varies for different ingredients.

Hi padhu, can you mention I a cup measurement how much chopped capsicum, carrots and beans? Here we get all sizes of onions and carrots so hard for me to figure this out

I use my measuring spoons and cups for all recipes. In India, the onions, capsicum, carrots, brinjals are not as big as you get in US or UK or other foreign countries, that is the reason I started using standard measuring cups and spoons.

Upma always comes like pongal for me. Like a paste.. what could be wrong. Pls help..

Dry roast the rava before making upma. Also add water in the ratio 1:2 .If it turns mushy, add a little less than 2 the next time you make upma.

Hi Padhu mam, as I am studying away from home your recipes have helped me soo much. Thanks a lot for your help . One query I had regarding upma… Everytime I make upma some of the upma gets stuck at the base of the kadai… And so everytime I need to soak the kadai in water till it becomes easy to clean it. Why does this occur ?
