Thinking of curd rice, I remember my younger days when I used to eat curd rice just for vadu manga. Curd rice with vadu maga-wow! I just love it so much. It is so comforting and heavenly. Today we will learn how to make seasoned curd rice with added vegetables following this easy recipe.
Finely chop all the vegetables.
Cook rice until soft. You can use pressure cooker also for cooking rice.
When done, mash it well with a masher when it is hot. Add milk and mix it well.
After it cools, add curd (plain yogurt) and needed salt. Add all the vegetables.Check out how to make curd at home.
Heat a tsp of oil, add mustard seeds, when it splutters, add ginger, green chillies and sauté for a few seconds. Add to the curd rice and mix everything well.
Garnish with finely chopped coriander leaves. Yummy curd rice is ready. It can be had as such or with any pickle.
You can add a little butter (optional), a tbsp of pomegranates and few green grapes if you like. Check out curd rice with fruits.

My kids do not prefer plain curd rice, may be because it is always available at home, but they enjoy the same curd rice if seasoned or presented differently.
My daughter’s lunch box contains drumstick sambar rice, plantain flower kootu, curd rice. I scooped out the drumstick flesh and kept it in another container to prevent the embarrassment of eating drumsticks at school. Check out more Lunch Box Ideas.

Hi, what do you mean by "curd"? Is this paneer?
Padhu Sankar
Curd is plain yogurt. In India we commonly use the word 'curd' for plain yogurt.

Hi Padhu, Your recipes are simply great. 🙂 I started my cooking by looking into your recipes. So far whatever I cooked by seeing your recipes, came out great and I always get appreciated and praised by my husband for my cooking. 🙂 I should really say thanks to you for this. Thank you Padhu.. 🙂
And now I have got one problem in cooking "Curd Rice". We are planning for a tour in which I was asked to cook curd rice. If I cook and pack it today evening we will eat it on next day afternoon. I need to cook it for over 26 people. Hence I am worried how I gonna cook and preserve it till next day afternoon so that it tastes great when we eat. Could you please help me in solving my problem by suggesting me the best way to cook and preserve it for over 19 hours?
Padhu Sankar
Dear Priyanka
Huge thanks for your nice words and comment. Glad to know that you found the website and recipes useful.
Regarding your doubt – when the rice is hot mash it nicely adding milk (lukewarm). Once the rice is warm, add curd and mix well. Then season it. The secret is to add more of milk and less of curd, so that it will not go sour when you have it the next day. Use fresh milk and freshly set curd. It will be fantastic the next day. I have tried it many times,so do not worry. Go ahead. Regarding the quantity, I feel you need 1/4 cup of uncooked rice per person.

As per Ayurveda – curd should not be consumed with milk and the same way curd and fruits should not be consumed together.

Does the vegetables need to be boiled for few minutes before adding to rice ?
Padhu Sankar
Not necessary. Just chop it finely.

You can try the recipes but always start with less quantity.Wait for 2 days to see if it suits him. Then you can gradually increase.

It was cold and raining today and I was craving for some curd rice with rasam. Found your website through google search. Cooked this and your Mysore rasam and both came out great! Everyone in the family loved it!
