I love brinjal rice very much. It is very easy to prepare and tastes delicious. Usually my mother prepares this recipe with tamarind, instead of tamarind, I have substituted with tomatoes. I have not used much spices for this rice. Today we will learn how to make Brinjal rice-Kathirikkai sadam following this easy recipe.

Ingredients needed
Basmati Rice -1 cup
Brinjals- 3-4
Ripe juicy tomatoes-3 (big ones)
Green chilli -1 (slit it)
Ginger (1 inch piece finely chopped )
Turmeric Powder -1/4 tsp
Salt as required
To be roasted and ground
Coriander seeds – 1 tbsp
Bengal Gram/chana dal – 1 tbsp
Urad dal -2 tsp
Red chillies – 3
Black peppercorns -1/4 tsp
Coconut – 1 tbsp
For the seasoning
Oil – 1 1/2 – 2 tbsp
Mustard -1/2 tsp
Urad dal -1/2 tsp
Asafoetida -1/4 tsp
Curry leaves -few
Preparation
Soak basmati rice in water for 20 minutes. Drain the water and cook rice adding 2 cups of boiling water.
Cut brinjal into cubes or lengthwise. Do not cut it into fine pieces. I used long purple variety for preparing this dish. Chop onions and keep it ready, if using onions
Heat a tsp of oil and fry red chillies, coriander seeds, chana dal, urad dal and pepper. After it turns slightly brown add coconut and fry. Powder it and keep aside. This is the masala powder.
Method
Heat oil, add the ingredients mentioned under seasoning. If using onions saute onions until transparent. Add finely chopped or grated ginger, green chilli and saute for a few more seconds.
Then add brinjals, turmeric powder and cook covered on low heat, sprinkling water when needed. Stir in between.
When the brinjals are slightly cooked, add finely chopped tomatoes, ground masala powder, salt needed and cook covered until the brinjals become soft. Do not forget to stir in between for even cooking.
Once the brinjals are soft, add the cooked rice and mix well.
Garnish with coriander leaves and serve hot with any raita or papads.
Note – You can prepare this dish with or without onions. If not using onions, after seasoning, add chopped brinjals, green chilli, turmeric powder and finely chopped ginger. Then follow the rest of the steps. With onions it tastes even more delicious!!
Note – You can use any rice for this recipe. If using regular rice, add needed cooked rice and mix well.

is it ok if i add uncooked rice and cook them along with brinjal and give 2 -3 whistles in cooker?

Aarthi – if you cook like that the brinjals will become mushy and the rice will not taste good. So cook both separately and then mix together.

Very nice. I am a North Indian and we usually make fried rice same ways use no peas beans carrot tomatos and capsicum. Here, the difference is roasted Urad and Bengal Gram along with coconut and curry leaves. This is really adding flavors to it. Thanks for the idea. Along with Brinjal I would Like to add capsicum and carrot to add more colors and taste.
