Ingredients needed
Bread slices – 6
Butter for toasting bread
For the soya keema filling
Soya Chunks – 1/2 cup
Onion – 1/2 cup chopped
Tomato – 1/2 cup chopped
Ginger – 1 inch piece
Garlic – 3-4 cloves
Green Chilli – 1 finely chopped
Curd/plain yogurt – 2 tsp
Salt to taste
Oil – 1 tbsp
Spice Powder
Chilli Powder – 1/2 tsp
Turmeric powder – 1/4 tsp
Coriander powder – 2 tsp
Kitchen king masala powder or garam masala powder – 3/4 tsp
Preparation
Finely chop onion, tomato, ginger, green chillies and garlic.
Boil water with 1/4 tsp salt. When water boils vigorously, add the soya chunks to it, cook for 3 minutes and switch off the heat. Let is sit for 10 minutes. Then drain the water completely and rinse soya chunks well 2 or 3 times, to get rid of the soya smell. Squeeze the soya chunks to remove all the water from it.
Grind/blend it in a mixer just for a second. Soya keema is now ready.
Method
Heat oil in a pan, add finely chopped onions, green chillies, ginger and garlic. Saute until onions turn transparent.
Add finely chopped tomatoes, chilli powder, coriander powder, turmeric powder, kitchen king masala powder or garam masala powder and salt needed.
Saute until tomatoes become mushy. Add thick curd/plain yogurt and saute for a few more minutes.
Add coarsely ground soya chunks and cook on medium heat until all the moisture evaporates and the mixture becomes dry. Our soya keema filling/ stuffing is ready.
Grease the toaster with butter. Cut the corners of the bread slices, place 1-2 tbsp of soya keema masala on a bread slice, close it with another bread slice and toast until golden brown. You can apply butter on the outside of the bread slices also if desired. If you do not have a toaster, you can toast it on tawa also.
Repeat the same process for the rest of the bread slices. You do not need any side dish for this. It tastes good as such. As this sandwich is rich in protein, it is good for growing children.
The stuffing is the same as I used for soya keema paratha. So in case, if you have leftover stuffing, you can make use of it by making this sandwich or paratha or soya keema rolls.
Note – You can use soya granules in place of soya chunks. Follow the instructions on the packet for cooking the soya granules.

Does nutrients in Soya evaporate after we boil it and throw the water?
