As I have already posted lot of couscous recipes, you must be knowing what couscous is. Today we will learn how to make coconut flavored couscous with sweet corn following this easy recipe with step wise pictures.

Ingredients needed
Instant Couscous – 3/4 cup
Coconut milk – 3/4 cup
Water – 3/4 cup
Salt to taste
Onion – 1 finely chopped
Green Chilli – 1 finely chopped
Sweet corn – 1 cup heaped
Chilli Powder or Paprika – 1/4 tsp (optional)
For the seasoning
Coconut oil – 1 1/2 tbsp
Cumin Seeds/jeera – 1 tsp
Hing/asafoetida – a pinch
Curry leaves – a sprig
For Garnishing
Coriander Leaves – 1 tbsp finely chopped
Preparation
Place couscous in a bowl and add salt to it. Mix 3/4 cup of coconut milk with 3/4 cup of water and bring it to boil. Pour the coconut milk + water mixture over the couscous.
Keep it covered. Let it sit until all liquid is absorbed.
Fluff it with a fork and keep it aside. Heat coconut oil in a pan, add cumin seeds, when it splutters, add hing, curry leaves, finely chopped onions and green chillies.
Saute until onions turn transparent. Add sweet corn, chilli powder and salt needed. Cook covered for a few minutes.
Then add couscous, mix well and cook for a few more seconds. Garnish with finely chopped coriander leaves and serve hot.

Note – There is no Hindi or Tamil word for couscous as far as I know. You should ask only for couscous. Moroccan couscous in available in all big super markets in India.
