Potato Gnocchi with Fresh Tomato Sauce

Ingredients needed
Potato Gnocchi – 2 cups
Olive oil – 1 1/2 tbsp
Tomatoes – 7
Onion – 1 finely chopped
Garlic – 4 cloves
Cayenne pepper – 1/2 tsp (optional)
Herbs
Oregano -3/4 tsp
Basil – 1 tsp
Salt to taste
Pepper powder to taste
For garnishing
Grated mozzarella or parmesan cheese

Preparation
Wash the tomatoes and using a sharp knife, cut a small cross on the top or base of the tomatoes. This is done just to peel the skin easily.
Bring water to boil in a pot, add the tomatoes and boil for 50-60 seconds. Then transfer the blanched tomatoes to a bowl of cold water to stop cooking. After 30 seconds, remove the tomatoes, peel and discard the skin and seeds. Puree 4 tomatoes and finely chop 3 tomatoes and keep it aside.
Method
Heat olive oil in a pan, add finely chopped garlic and saute for a few minutes. Add finely chopped onions and saute until they turn transparent.
Add the chopped tomatoes and the tomato puree, cayenne pepper and salt needed. Once it starts boiling, lower the heat and cook until the sauce reduces and thickens slightly.
Add oregano, basil and pepper powder to taste. Now our fresh and easy tomato sauce is ready. Now we will cook the potato gnocchi.
Bring a pan of salted water to boil. Add the potato gnocchi and cook until it floats on the surface.
Carefully remove the gnocchi with a slotted ladle and keep it aside. Reserve 2 tbsp of the liquid and discard the rest.
Now add the cooked gnocchi, reserved liquid to the sauce and toss well to combine.
If you can get fresh basil, add 3-4 chopped leaves, sprinkle freshly grated cheese and serve hot.
Potato gnocchi with tomato sauce is ready to be served.
Note – If you cannot get potato gnocchi, you can substitute any pasta in place of gnocchi.
