Prep time – under 10 mins
Cook time – 30-40 mins
All purpose flour (maida) – 1 1/2 cup (195 gms)
Sugar – 1 cup (200 gms)
Cocoa powder – 1/4 cup (25 gms)
Baking soda -3/4 tsp
Baking powder -1 tsp
Salt -1/4 tsp
Unsalted Butter melted – 1/3 cup (75 gms)
Warm water – 1 cup
Lemon juice or vinegar – 1 tbsp
Vanilla essence – 1 tsp
Preheat the oven.(177 degrees C)
Grease and dust the 8 inch square cake pan or line it with parchment paper.
Method
Variations -You can substitute melted butter with any flavorless oil.

dear di..aapke kehne ke hisaab se maine soda ki quantity 1,1/2 cup maida me 3 pinch. he daali. cake to acha or tasty bana par wo thoda sticky tha or fluffy bhi nahi bana tha. dii maine market me kisi co. ka acha soda search kiya to kahin nahi mila. sab yahi bole k ye loose he milta hai. firr bhi di..me try karti rahungi. or di hum log egg wali koii bhi dish nahi khate…issliye aapse request hai k please baking recipie me jitna ho sake eggless recipie batane ki koshish karen.

Dear Alicia -I am so sorry to hear that.The reasons could be improper mixing or the oven temperature could have been too low. Another suggestion- use parchment paper to line the baking pan. It is easy and a no fail way to get the cake out of a pan

what is the oven temp in F? i used 350 F, for 30 minutes and the middle was not done. then i put it in for 5 minutes more and the middle was perfect but the edges were crisp.

You can preheat the oven for 10 mins at 350 deg.F
and bake the cake until a toothpick inserted into the cake comes out clean.The timing differs according to the size of the pan.Remove from oven and place it in a wire rack to cool. If you over bake, the the cake will become dry.

dear padhu, i tried this recipe, baked for 30 min at 180 C still centre was not done and fissures developed . I then microwaved for 2 min at 900 W after which centre was done but the entire top layer got crisp.After preheating I switched off the oven for 2 min and switched on before putting the cake inside, is it ok? how to avoid lumps while mixing dry and wet ingredients?

Cake will be dry if you have over mixed or over baked the cake.
Try increasing the oven temperature a little more, if the center of the cake is not done or you bake for a few more minutes. Keep an eye while doing so.
Regarding preheating – that does not matter much, if you switch it off just for 2 minutes.
Your last question – Did you sieve the maida? Add the wet ingredients with the dry ingredients. Make a well in the center of the dry ingredients and add the wet ingredients and mix gently with a rubber spatula.Stop mixing when the mixture is combined. Also you have to add the wet ingredients little at a time.
I have morphy richards OTG oven. I do not have microwave,so do not know about baking with microwave.

You can keep it for 3 days and for a week in the refrigerator. It becomes a bit hard, if kept in the refrigerator. Yes, you can make it a day earlier and frost the next day. You can use chocolate sauce also as topping.

I have tried this cake last year for my son's birthday in December. Looking at the colour, I thought it is burnt. But after last minute thought I got it cut & gave to only family members. Hi..I read your post about measuring cups and spoons but still confused in some aspects as I haven't baked till now.sorry.the measuring cups I saw in amazon shows one cup=237ml..can I use it for measuring flour for this cake?

And I bought weikfeld baking powder.what is the other baking soda? Is it what we get as 'soda uppu'in stores?

All ingredients will not be the same when you convert it from cup to grams. For (eg) sugar and maida -the texture is different, so the same 1 cup measurement will differ in grams. You can use any standard measuring cups. Just search "measuring cups" in Amazon

One of the reasons why cake cracks is the oven temperature might be too hot. Also avoid opening and closing the oven during baking, as it can cause the temperature to fluctuate.
