Ingredients needed
All purpose flour (maida)- 260 grams (2 cups)
Baking soda – 1 tsp
Baking powder – 1 1/2 tsp
Salt -1/2 tsp
Cinnamon powder- 1 1/2 tsp
Egg – 4
Granulated sugar – 1 1/2 cup (300 grams)
Vegetable oil – 1 cup ( any flavorless oil)
Vanilla extract – 2 tsp
Walnuts chopped – 100 grams
Finely grated carrot – 1/2 cup
Preparation
Grease the baking tray and dust flour.
Beat eggs well until frothy.(I used electric beater)
Add sugar little by little and beat till sugar dissolves.
Add vanilla essence.
Then slowly add 1 cup of oil and beat it well.
Fold in flour gently until well incorporated.
Then mix in grated carrot and chopped walnuts.
Bake for 25-30 minutes at 180 degree C or until a toothpick inserted into the center of the cake comes out clean.
Note
I halved the above recipe and I got 4 cupcakes and the cake below(5 “x 2 “)

What you are seeing in the picture is a very small OTG oven (Smart Chef) which bakes very less quantity.So now I have shifted to Morphy Richards OTG 18 ltrs. It is very good.

250g Tub of Cream Cheese
(or Plain smooth Cottage Cheese)
250ml Icing Sugar (or more if you want it sweeter)
beat both the ingredients until it is of a smooth consistency.

looks yummy, mouthwatering and delicious. I am pretty new to baking. If this has to be made in a microwave then at what temperature has it to be baked and for how long? and how long do you preheat the oven and at what temperature? looking forward to bake this cake for my daughters!!

I do not know about microwave .In oven you have to preheat (180 degree C)for 15 minutes. Then you have to bake at 180 degree C for 25-30 minutes or until a toothpick inserted into the center of the cake comes out clean. Go ahead and try this cake .It tastes great.

Tried this cake just now…and it came out amazingly well….considering the fact that i am a 1st time baker!! I used the red variety of carrot that is available in winters….but the carrot gratings were not visible in the cake…is it normal or shd i used bigger gratings next time? i used the same temperatures uve mentioned i above in the microwave too!! thanx a ton!!

i dont have a standard otg.. but have a microwave.. can i cook the cake in microwave convection mode with same timings? or can i cook the same cake in the cooker?pls help..i really wanna cook this delicious looking carrot cake for my family..

You can cook the cake in microwave convection mode but I do not know if the same timings will work out as I do not have a microwave. You can bake this cake in cooker also following the same method I have followed in my Vanilla cake in Pressure cooker

Deepa Suresh – Glad to know that you found my blog helpful. Actually I feel OTG is best for baking. This is my personal opinion. I have Morphy Richards OTG oven 18lt for more than a year and it has not given me any problem so far. I suggest that you go to amazon.com.There you will find reviews of people who have used the product which will help you decide what oven to purchase.

Each oven differs. Kindly refer the instruction manual you got along with the oven.

Please let me know the settings for your OTG. As i do not have manual for my OTG. I have knob to select – top, bottom , and both options. Also , i have top , bottom, both for rotisserri function. Thanks.

Use the bottom coil alone for baking. But when you find the top of the cake not cooked properly, you can use top coil just for 2-3 minutes in the end.Keep a watch when using the the top coil as it might burn the cake.(I have written below the last picture- kindly check that)

I have a question though, I have a convection microwave, but usually prefer to use the pressure cooker. In fact, I stumbled upon this post while looking for a recipe for how to make a cake in a pressure cooker….so, is it possible to make this cake in the pressure cooker?
And secondly, when making a cake in pressure cooker, should we use water at the bottom or salt/sand? Why?

Thank you Rashmi. You can bake any cake or cookies in a pressure cooker.
You can use sand or salt at the bottom of the cooker. The sand when heated produces heat which cooks the cake.

I tried your carrot cake today as I Was excited to experiment in my new OTG Murphy Richards 18ltrs same as yours but the cake was not baked according to the said time…it took roughly 40 mins..I baked In the middle rack..timing temperature everything was done according to your recipe…pls help me with time settings

It might vary depending on the pan used. The best way to check if the cake is cooked is using the toothpick – insert a toothpick into the center of the cake, if it comes out clean, you cake is done.

Yes, you can substitute wheat flour instead of maida. In that case, the cake will be moist and dense. If you do not want the cake to be too dense,you can use half wheat flour and half maida.

I have tried the baking of carrot cake as per the measurement given in your blog….the cake has baked very well….but it tastes strange ….i don't know whether its due to 1 1/2 tspoon of cinnamin powder used or due to 1 1/2 tspoon of baking powder.

Avoid using old stock baking powder. If you do not like the taste of cinnamon, you can reduce it.

I have 47 lts otg sud I bake with only bottom coil, placing the cake pan in bottom rack , or can I put it in middle rack with both coils on… If so is 180 degree too high

Use only the bottom coil. If you use both, the cake will get burnt.

I have tried this recipe many times padhu and it is a keeper. Now in this lock down period I onl5have cooking soda at home I don’t have baking powder is it possible to make this cake using only cooking soda what will be the measurement?
