This is a very simple low fat, stir fry recipe which is very healthy, simple and also colorful. Learn how to make Tamil Brahmin style beans carrot curry following this easy recipe.
String the beans (french beans),wash and cut it into small pieces.
Wash, peel the skin and chop the carrots.
Heat oil, add mustard seeds, when it splutters, add urad dal, red chillies, hing and curry leaves.
When urad dal turns golden brown, add the beans, chopped carrots, peas, turmeric powder and needed salt.
Sprinkle little water and cook covered on medium low heat. Stir 2-3 times in between for even cooking. You can sprinkle water 2-3 times in between, if required while stirring.
Once the beans becomes tender, add grated coconut (fresh preferable), mix well and remove from flame.
Serve this Simple Beans Carrot stir fry or Beans Carrot poriyal with rasam, sambar, kuzhambu or curd rice or roti.
Note – You can do this in a pressure pan or small cooker without the whistle/weight on low or medium heat. You can also add slit green chillies.

Ingredients needed
