How to prepare Zebra Striped marble cake
Recipe Source-Azerbaijan Cookbook
Prep time -under 15 mins
Bake time – 40 mins
Yields -one 9-inch (23 cm) round cake
Ingredients needed
Sugar – 1 cup (granulated )
Eggs – 4
Milk – 1 cup (room temperature)
Oil – 1 cup (any flavourless oil)
Vanilla essence -1/2 tsp
All purpose flour/Maida -2 cups
Baking powder -1 tbsp
Cocoa powder -2 tbsp
9 inch round Cake pan
Preparation
Preheat the oven to 350F (180C)
Sieve maida with baking powder three time and keep it aside.
Sieve cocoa powder separately if there are any lumps.
Method
Beat the eggs well with an electric hand mixer or wire whisk.
Add sugar and beat until the mixture is creamy.
Add milk + oil + Vanilla essence and mix well.
Fold in maida/ all purpose flour gently.
How to bring Zebra strip effect
Now pour 1/4 cup of plain batter in the center of the baking pan.(pic 1 CW)
Then pour 1/4 cup of cocoa batter on top of the vanilla batter in the center (pic -2)
Do not disturb or try to shake it or wait for it to spread or tilt the pan for it to spread. It will spread by itself. Keep on pouring both the batter alternatively until all the batter is over. Pic -3
Bake in a pre heated oven for about 40 minutes or until a toothprick inserted in the center of the cake comes out clean.
Remove the cake from the oven, loosen the sides of the cake with a knife and invert it on a plate. Leave it to cool.Then you can cut it and enjoy your Zebra cake!

I hav a doubt ..:-) i made d cake but dint work out well.. ll it b wrong if v use more or less baking powder??? and one more thin wen i added all purpose flour i used a blender to mix it.. is dr any prob if v mix d flour with a blender??? plz clarify…
Measurements are very important in baking. So you must stick to the exact measurements. Then after adding maida /all purpose flour, you should not beat vigorously as the cake will turn hard.Gently fold in maida with a wooden spatula .You can use hand mixer at very low speed and mix the maida gently. Once the maida is mixed well, stop it .Do not over beat.

Hi,your recipes are very nice.I have samsumg grill microwave but somebody told i need convection mode microwave for baking.So please help should i go for convection microwave or OTG.Which one is help me out for baking and other purpose.

Yes, you need convection mode microwave for baking. My friend has a convection mode microwave and she always complains that it is not baking properly.
I personally prefer OTG for baking and I feel it is great for baking.I have Murphy Richard OTG oven and it is doing a good job.

Shells – You can use melted butter instead. It'll taste better.

I usually use my pressure cooker for baking , I have tried simple vanilla cake from your blog and it was simply superb . I tried this one also in the same method, Initially when i was puring the batter , the zebra effect came out perfectly, after 40 mins when i opened the cooker the batter seemed to be all mixed up like a marble cake. The proportion is same as advised by you. Just wanted to know if you could identify some defects so that i can rectify it next time

Sindhuja -The proportion is correct. You have to be very careful while transferring the cake, even a slight shake will mix up everything.
Regarding your doubt in Red velvet cake – I used only amul cream as I could not get anything else.

Hi Padhu, I made this cake and it was really tasty. The problem which I face is, d sides of my cakes come out really well, but from top and bottom it is always dark brown..so d zebra pattern wasn't visible at all. Secondly, it always get stuck from bottom. I hv a hard time taking it out..and sometimes it breaks. Please guide. Thanks a lot.
The problem is either because you did not prepare the pan properly or you would have taken the cake out of the pan when it is hot. Also, if you feel it is browning too much, you can reduce the baking time a little. Even last week I made this same cake with butter instead of oil (I have updated it) and it came out so well. Hai Padhu, i tried this cake with oily it was good. But when i used butter, the batter was not in pouring consistency comparable to oil batter. I turned into marble one. It was too soft and very tasty than oil one. At this point what should i do – need to add hot water or warm milk. Pls reply soon i want to try.
I assume that you have asked doubt for zebra cake with butter – You can add milk (room temp) if the batter is too thick.

You can prepare this cake either with butter or oil. Read the last paragraph titled "updated" I have given measurements for butter.

It should be a little thick but not too thick.
yummy tummy.. i tried this cake for first time and it was super hit in my home. i added melted hershey's chocolate instead of cocoa powder. one question mam, can i half the batter and make plain cake or cupcake?
I tried the Zebra cake and it turned out all muddled up.. The zebra pattern was perfect after I transferred it into my OTG too. But after it started getting baked it started Mixin up. I'm wondering what could've gone wrong.
I used a spatula to make the concentric circles .. , didn't measure if it was exactly 1/4 cup. Another thing is , I used an 8" cake tin. so, to avoid fillin up the cake tin to the brim , I poured a little batter in a couple of cup cake tins too
You should keep it inside the oven undisturbed.Follow the exact method above, you will get it well next time.

Hi Padhu the cake looks amazing. I tried this cake today and came out nice and also got nice zebra pattern but I faced one problem- my cake on top turned sticky after I left the cake to cool off. When I removed the cake from oven it wasn't sticky and even when toothpick inserted in the center cane out dry.Also I was getting the egg smell from the cake. Please let me know what size of eggs did you use. I stay abroad and here we get medium and large eggs. I used large eggs and I wonder if that was the mistake. Please advice. Thank you so much.

It happens if it is stored before they are completely cooled or even if the weather is humid.If preferred, you can frost the cake without any problem.
In India, the eggs are mostly medium size. I used only medium sized eggs.
hi padhu my cake is hard on the top. What is the problem
Always keep the baking tin in the middle rack. Your oven might be hotter on top. Then it will cook the top too much and make it hard. So keep your baking tin with cake batter in the middle shelf. Also check the oven temperature. If it is too hot, it might happen.

Hi. I tried the cake . It turned out really well. I wanted more sweet, so added a bit more . I am going to bake a doll cake with 8 inch diameter and 5 inch deep cake( kind of a cone appearance). Should I double all the ingredients listed. How much should be the quantity . And how long I should keep in the oven. Please help. Thanks a lot

The cake didnt come out well. It seemed watered down because the quantity of milk and oil mentioned here is too much actually. So please ladies, check twice about this.
This cake has been tried and tested my me and many other readers several times. Not sure what mistake you did.
Considering the fact that I've been baking for more than 30 years now, i think my mistake lay in following your recipe to the T. I should have trusted my seasoned experience and reduced the quantity of milk and oil.
