Ingredients needed
Bread – 4 slices (I used brown bread)
Green Chillies – 1 finely chopped
Capsicum – 2 tbsp finely chopped
Tomato – 1 small deseeded and chopped
Pepper powder as needed
Salt as needed
Cheese (grated) as needed
Garlic – 2 cloves grated
Coriander leaves – 1 tbsp finely chopped
Olive oil – 1 tsp
Preparation
Toast the bread slightly. This step is optional.
Preheat the oven at 180 degree C for 10 minutes.
Method
In a bowl mix together, finely chopped capsicum, tomato (remove seeds), green chilli, grated garlic, grated cheese (mozzarella, cheddar or Britannia cheese), coriander leaves, salt, pepper and olive oil.
Spread the mixture on the bread (if preferred cut into triangles ) and grill in a preheated oven until the cheese melts and turn light golden.
Serve hot. You can experiment with toppings of your choice.
Tawa Method
After spreading the prepared mixture on the bread, toast it on tawa on medium heat until the cheese bubbles and turns light brown.

Hello PadhuShanker,
I used a tava but the cheese does not melt at all rather the bottom side of the bread gets really toasted in the meanwhile to a very very crunchy texture. What to do to melt the cheese and in any case the veggies too don't get cooked in the tava method since we are not flipping the bread slices right?? do suggest
Warm Regards
Padhu Sankar
Bring the cheese to room temperature and then use it. Keep it on low heat, the cheese has to melt. Veggies will be crunchy. Also cut the vegetables finely.

Bring the cheese to room temperature. Use mozzarella cheese for best result.
