What I love about Couscous is that it is so easy to cook and it’s so versatile. As it is bland, it can be paired with just anything we love. I made this simple lemon flavored couscous and it was absolutely delicious. Perfect for both breakfast and dinner. It is great for lunch box also. Today we will learn how to make lemon couscous (Indian style) following this easy recipe.

Ingredients needed
Couscous – 1/2 cup
Water – 1 cup
Salt – 1/4 tsp
Oil – 1 tbsp
Mustard seeds – 1 tsp
Cumin seeds – 1 tsp
Curry leaves – a sprig
Ginger – 1 inch piece
Green chilli – 2 slit
Carrot – 1 big or 2 medium size
Roasted peanuts or cashew nuts – 2 tbsp
Turmeric powder – 1/4 tsp
Salt to taste
Fresh lemon juice as needed
For Garnishing
Fresh Coriander leaves – 1 tbsp finely chopped
Preparation
Bring water to rolling boil, add 1/4 tsp of salt and pour it over the couscous, mix well and keep it covered. Let it sit for 15 minutes.
Peel the skin and finely chop ginger and carrots.
Method
Heat oil in a pan, add mustard seeds, when it splutters, add cumin seeds and saute for a few seconds.
Then add curry leaves, finely chopped ginger, slit green chilli, finely chopped carrots, roasted peanuts and turmeric powder.
Cook for a few minutes until the carrots become tender.
Add lemon juice (juice of 1 small lemon or as needed), salt needed and switch off the heat. Fluff couscous with a fork and add to it. Mix well so that it is well coated with the seasoning. Taste and adjust salt and lemon juice to suit your preference.
Garnish with coriander leaves and serve hot. It taste good on its own. If desired, you can have it with any chutney of your choice.

What is meant by couscous? Is it rava

It is not rava but looks like rava. Couscous is a tiny pasta made of wheat.
