- 1 cup Dried white peas
- 1 Onion
- 2 Tomato
- 1 Green chilli (as needed)
- 1 inch Ginger chopped
- 4 cloves Garlic
- Salt
- 2 tbsp Oil
- 1/2 tsp Turmeric powder
- 2 tsp Chilli powder
- 2 tsp Coriander powder
- 1 tsp Roasted Cumin powder/jeera powder
- 1 1/2 tsp Kitchen King masala powder
- 2 tbsp Oil
- 1 tsp Cumin seeds
- Coriander leaves Finely chopped
- Aloo tikki
- Ragda
- Green Chutney as needed
- Sweet Chutney as needed
- Onions finely chopped
- Coriander leaves finely chopped
- Sev

Wash and soak 1 cup of white peas overnight or for 5-6 hours in enough water.

Add 1/2 cup of water and pressure cook with a pinch of turmeric powder, salt needed, 1 crushed garlic and 1 tsp chilli powder for 5-6 whistles or until soft.

Once the pressure subsides, open the cooker and leave it to cool.

Grind half of the cooked peas to a coarse paste and keep it aside.

Heat 1-2 tbsp oil in a pan, add finely chopped onions.

Saute until onions turn light brown. This is a very important step. You can add a little salt to quicken up the process. Saute continuously for even browning.

Add a tsp of ginger-garlic paste or chopped ginger (1 inch piece) and 4 cloves of garlic.

Once the onion turns golden brown, add 2 chopped tomatoes and green chillies.

Cook until tomato turns mushy. Once the tomato turns mushy, turn off the heat. Leave it to cool.

Then blend it to a smooth paste. Our onion tomato paste for the ragda is ready.

Heat 2-3 tbsp of oil in a pan, add cumin seeds, when it splutters, add the prepared onion tomato paste.

Add turmeric powder, chilli powder, coriander powder, roasted cumin powder, kitchen king masala powder or garam masala powder and salt needed.

Saute until the raw smell of the spice powder goes.

Add the coarsely ground peas and saute for a few seconds.

Add the rest of the cooked peas along with 1 1/2 - 2 cups of water. -
Check for salt. If required, add salt needed.

Simmer for 5-6 mins and turn off the heat. The ragda should be a little watery.

Garnish with finely chopped coriander leaves.

Ragda is ready.

We need ragda, aloo tikki, chaat chutney, finely chopped onion, finely chopped coriander and sev for it.

Place the potato patties in a shallow bowl or plate.

To make Ragda patties, you need to make

First we will prepare the Ragda -Ragda is a spicy gravy prepared with white peas.

Add turmeric powder, chilli powder, 2 tsp of coriander powder, a tsp of cumin powder, 1 1/2 tsp of kitchen king masala powder or garam masala powder and salt need.
Saute until the raw smell of the spice powder goes.
Add the coarsely ground peas and saute for a few seconds.
Add the rest of the cooked peas along with water.You can add 1 1/2 – 2 cups of water, salt needed and cook on low flame for 5 minutes. (as we have added salt to the peas, to the masala, add cautiously)
The ragda should be a little watery. After simmering for 5 mins. Turn off the heat and garnish with coriander leaves.

- Place the potato patties in a shallow bowl or plate.
